CURD SEMIYA | THAYIR SEMIYA | SEMIYA BAGALA BATH


Curd semiya | Thayir semiya is a simple recipe prepared with vermicelli | semiya.  Serve this curd semiya as the last course meal during a party or simply serve it as a comfort dish for lunch or dinner.  The cooling effect of curd/yoghurt and the perfectly cooked vermicelli gives a smoothing effect to your stomach & rejuvenate your taste buds.


Ingredients :

  1. Water - 2 cups
  2. Salt to taste
  3. Oil - 2 tsp
  4. Roasted seminal - 1/2 cup
  5. Mustard seeds - 1/2 tsp
  6. A pinch of hing
  7. Ginger, chopped - 1/2 tsp
  8. Green chillies, slit - 2 nos
  9. Onion, chopped - 1 tsp
  10. Cahewnuts - 4 nos
  11. Curd - 3/4 cup
  12. Milk - 1/4 cup
  13. Cucumber, chopped - 1 tsp
  14. Raisins - 1 tsp
  15. Coriander leaves for garnishing

Method :
In Tamil 

In English


1.  Boil water, salt & oil.  Add roasted semiya & cook until done (Around 2 to 3 mins).

2.  Drain the water & bring the semiya to room temperature. 

3.  In a separate pan, add oil, mustard seeds, hing, green chillies, ginger pieces, cashew nuts & chopped onion.  Roast & keep the seasoning aside.

4.  In a large bowl, mix together cooked semiya, curd, milk, salt, seasoning, cucumber, raisins, & coriander leaves.


Enjoy.

Garlic flavoured Masala Pori


Masala kara pori is a perfect tea time snack.  Easy, quick & healthy snacks which melts in our mouth.  Simple spices are added to enhance the taste of pori.  Use freshly bought pori for making a good crunch kara pori. 


Ingredients :

  1. Oil - 1 tbsp
  2. Mustard seeds - 1 tsp
  3. Green chillies - 4 to 5 nos
  4. Roasted gram dal - 2 tbsp
  5. Cashewnuts - 1 tbsp
  6. Peanuts - 1 tbsp
  7. Curry leaves 
  8. Garlic, crushed with skin - 4 nos
  9. Turmeric powder - 1/2 tsp
  10. Red chilly powder - 1 tsp
  11. Hing
  12. Salt to taste
  13. Puffed rice - 5 cups

Method :

In English 

1.  Heat oil in the pan.  Add mustard seeds.

2.  Once the mustard seeds splutters, add green chillies, roasted gram dal, cashew nuts & peanuts.  Mix well.

3.  Add crushed garlic pods, curry leaves & hing.

In Tamil :



4.  Add turmeric powder, chilly powder & salt to taste.  Mix altogether over the low heat.

5.  Add puffed rice.  Toss them well & switch off the flame.

6.  Bring it to room temperature & store it in air tight container.


Enjoy with tea.

Rajma Masala - Perfect healthy side dish


Rajma masala is the most popular north indian dish served with plain rice or with rotis & parathas.  This is spicy, flavourful, aromatic & nutricious signature dish made by pressure cooking the kidney beans and mixed with masala.  It taste simply out of the world :)


Ingredients :

  1. Red kidney beans - 1 cup
  2. Oil - 1 tbsp
  3. Cumin seeds - 1 tsp
  4. Onion, chopped - 1 cup
  5. Ginger garlic paste - 1 tsp
  6. Turmeric powder - 1/4 tsp
  7. Tomato puree - 1 cup
  8. Potato - 2 medium sized, cubed
  9. Garam masala - 1 tsp
  10. Chilly powder to taste
  11. Kasturi methi - 1 tbsp
  12. Butter - 1 tbsp
  13. Corriander leaves for garnishing

Method :

In Tamil:



1.   Soak the red kidney beans overnight and pressure cook it in the salted water.

2.   Heat oil in the pan, add cumin seeds & chopped onions. Saute.

In English :

3.   Add turmeric powder, ginger garlic paste, potatoes  & tomato puree.

4.   Add chilly powder, garam masala, kasturi methi & cooked kidney beans. Pressure cook the masala for one more whistle. 

5.    Finally, add butter & coriander leaves for garnishing.


Serve warm.

Old Fashioned South Indian Style Chicken Curry


Old fashioned South Indian style chicken curry is, without doubt, one of our most favourite dish.  The spices are warm & comforting and so very satisfying.  You just have to taste the dish to understand how delicious it is.  And it makes the perfect side dish for rice, chapatti, roti, puri, idly & idiyapam. 


Ingredients :

For Spice paste:
  1. Cardamom - 3 nos
  2. Cloves - 4 nos
  3. Black pepper corns - 1/2 tsp
  4. Curry leaves
  5. Star anise - small sized
  6. Fennel seeds - 1/2 tsp
  7. Cumin seeds - 1 tsp
  8. Coriander seeds - 1 tbsp
  9. White poppy seeds - 1 tsp
  10. Onion - 1 large sized
  11. Freshly grated coconut - 1/2 cup
Others:
  1. Oil - 2 tbsp
  2. Onion, chopped - 1/2 cup
  3. Ginger garlic paste - 1 tbsp
  4. Turmeric powder - 1/2 tsp
  5. Red chilly powder - 1 tsp
  6. Curry leaves 
  7. Tomato puree - 1/4 cup
  8. Chicken - 500 gms
  9. Salt to taste
  10. Coriander leaves, for garnishing


Method :


In Tamil



1.  Clean & cut the chicken.

2.  Dry roast the all the spices & ground them to smooth paste using little water.

3.  In a non-stick pan, add oil & finely chopped onions.  Saute till tender.

4.  Add ginger garlic paste, turmeric powder & salt to taste.  Saute.

                                           In English



5.  Add grounded spice paste & tomato puree .  Cover & cook for 5 mins.

6.  Add cleaned chicken pieces & curry leaves.

7.  Add chilly powder & adjust the salt.  Cover & cook over medium flame for 15 mins or until cooked.

8.  Garnish it with coriander leaves.



Ready to enjoy.
