BUTTER CAKE

A basic butter cake has a moist, sweet crumb and is very versatile.  We can flavor the batter with extracts & aromas, slice the cooled cake and fill it with cream, preserves, or fruit, glaze or frost it, or simply enjoy a plain slice with a  cup of tea or coffee.  They are not hard to make, her is my favorite, never-fail recipe.

Ingredients :
  1. All purpose flour - 3 cups (450 gms)
  2. Baking powder - 1 tbsp
  3. Salt - 1/2 tsp
  4. Butter - 1 cup (250 gms)
  5. Sugar - 2 cups ( 400 gms)
  6. Vanilla extract - 2 tsps
  7. Large eggs, seperated - 4 nos
  8. Milk - 1 cup

Method :

1.   Preheat the oven to 350 F/ 180 C.  Line the baking pan with parchment paper.

2.   Combine the flour, baking powder, salt in a large bowl.  Beat the butter, sugar and vanilla in a large bowl until creamy.  

3.   Add the eggs yolks one at a  time, beating until just blended after each addition.  Gradually beat in the mixed dry ingredients, alternating with the milk.

4.   In another bowl, using a clean beater, beat the egg whites until stiff but not dry.  Use a large spatula to fold the into the batter.  Spoon the batter into the prepared pan.

5.   Bake for 45-55 mins or until a toothpick inserted into the center comes out clean.  Cool the cake completely & serve.

Vintage Victoria sponge Cake with Cream, Jam & Strawberry

Happy valentines day to all the readers & this cake is for my valentine :)

Ingredients :
  1. Softened butter - 225 gms
  2. Castor sugar - 1 cup
  3. Eggs - 4 nos
  4. Self raising flour - 1 1/2 cups
  5. Baking powder - 2 tsp
  6. Strawberry jam - 1/4 cup
  7. Cream - 300 ml, whipped with icing sugar to taste
  8. Fresh strawberries ( finely chopped & for decoration)

Method :

1.   Preheat the oven to 180 C.  Lightly grease two 20 cm baking tins and line the bases with the non-stick baking paper.

2.   Combine the butter, sugar, eggs, sifted flour and baking powder.  Beat well until well blended and thoroughly mixed to a creamy batter.  Divide the mixture between the two cake tins.

3.   Bake for 25-30 mins or until lightly browned and cooked through.

4.   Cool in the tin for 10 mins.  Turn out onto a rack to cool completely.

5.   Fill with jam, cream & strawberries between the cake.  Frost the cake around with the whipped cream & garnish it with strawberry rose.
