Orange Cake - Simply delicious !!


Fragrant, moist and tender orange cake flavoured with freshly squeezed orange juice and orange zest.


Ingredients :
  1. All purpose flour - 1 cup
  2. Sugar - 3/4 cup
  3. Milk - 2 tbsp
  4. Eggs - 3 nos
  5. Butter, melted & cooled - 75 gms
  6. Grated zest of 1/2 orange
  7. Baking powder - 1 1/2 tsp


Method :

1.  Preheat the oven to 180C.  Lightly grease and flour the baking pan.

2.  Sift flour and keep aside.

3.  Beat eggs and sugar together until light and creamy.  Mix all ingredients together except baking powder.  Leave for a few minutes.  Then add baking powder.

4.  Pour into prepared tin and bake for 30 mins.  Ice with orange icing and garnish with candied fresh orange slices.

Candied Fresh Orange slices - For Bakers n Orange lovers !!!


Candied fresh orange slices are chewy and sweet.  This can be used as a edible decorations for cakes and drinks.  To make it more kids-friendly, simply dip them in chocolate for an easy dessert treat. 


Ingredients :
  1. Mandarin oranges - 2 nos, small sized
  2. Sugar - 1/2 cup
  3. Water - 1/4 cup 
Method :

1.  Wash and slice the oranges.  Discard the seeds, if any.

2.  In a large skilled, bring water and sugar to boil.  Turn the heat to low flame.

3.  Arrange the orange slices in the sugar-water mixture in a single layer.

4.  Simmer the orange slices over low heat for 30 mins or until the rinds are tender, turning every 15 mins.

5.  Allow the orange slices to cool completely.  Serve immediately or store it in an airtight container and refrigerate for longer use.

Paruppu podi | Lentils powder


Paruppu podi is our favourite podi which taste great, when mixed with hot steaming rice and a dollop of ghee!!!


Ingredients :
  1. Toor dal - 100 gms
  2. Channa Dal - 100 gms
  3. Ural dal - 4 tbsp
  4. Red chillies - 5 nos, to taste
  5. Hing -  1/4 tsp
  6. Tamarind - small sized
  7. Garlic - 5 pods
  8. Curry leaves, handful
  9. Sesame seeds - 1 tsp
  10. Salt to taste


Method :

1.  Dry roast all the ingredients except salt over medium heat. (If possible, roast them separately)

2.  Cool the mixture completely and grind them to powder using salt.


Store it in an air tight container.

Eggless Granny's Chocolate Pound Cake with Chocolate n Almond Glaze !!!


Eggless chocolate cake is rich, moist and dense with a drizzle of chocolate glaze with toasted almonds.  Perfect for birthday's.  Chocolate lovers everywhere will rejoice upon first sight and bite.  It is heavenly !!! 


Ingredients :

  1. All purpose flour - 200 gms
  2. Unsweetened cocoa powder - 1/2 cup
  3. Baking powder - 2 tsp
  4. Baking soda - 1 tsp
  5. Condensed milk - 1 tin (395 gms)
  6. Unsalted butter, melted - 100 gms
  7. Vanilla extract - 1 tsp
  8. Water - 150ml
For Chocolate Glaze :
  1. Semi-sweet chocolate - 180 gms
  2. Butter - 50 gms
  3. Honey - 2 tbsp 
  4. Sliced almonds, toasted - 1/2 cup



Method :

1.  Preheat the oven to 150 C.  Grease and line up the baking pan with a parchment paper.

2.  Sieve the flour, cocoa powder, baking powder and baking soda.  

3.  In a large bowl, combine together condensed milk, melted butter, vanilla extract and water.  

4.  Stir in the dry ingredients into the wet ingredients and mix well until just combined.

5.  Pour the mixture into the prepared pan and bake it for 45 mins or until the tooth pick inserted comes out clean.  Allow it to cool completely.




6.  For the chocolate glaze :  Melt the chocolate, butter and honey over the simmering water.  Allow them to cool little bit and glaze them over the chocolate cake.   Sprinkle the toasted almonds and press them slightly inside the chocolate glaze.

Okra Pachadi | Vendakkai Thayir Pachadi - South Indian Style !!


Vendakka pachadi is one of my favourite dip.  This is prepared by frying the lady's finger till crispy and then it is mixed with curd.  Very healthy side dish and easy to prepare.   


Ingredients :

  1. Ladies Finger - 15 nos
  2. Oil - 1 tsp
  3. Onion, chopped - 1 small sized
  4. Green chillies - 2 nos
  5. Curry leaves 
  6. Mustard seeds - 1 tsp
  7. Cumin seeds - 1/2 tsp
  8. Curd / yoghurt - 1 cup
  9. Salt to taste


Method :

1.  Slice the okra's into thin circles.  Add some salt and set aside for some time.

2.  Heat oil in the pan, add urad dal, mustard seeds, cumin seeds, curry leaves, green chillies, chopped onion and okra's.  Saute till crispy.  Allow it to cool completely.

3.  Before serving,  mix together the crispy okra's and curd.  Adjust the salt, if necessary.


Serve with rice.

Perfect Crispy Grilled Chicken - Crusty out n Juicy in !!!


This is an incredible fried chicken recipe, crunchy and crusty on the outside and juicy & flavourful inside.  The chicken is infused with spices and seasonings and soaked in the buttermilk to amp its flavour.  This method is much kids-friendly. 


Ingredients :

  1. Chicken pieces
  2. Buttermilk - 1 cup
  3. Salt to taste
  4. Red chilly powder - 1 tsp
  5. Ginger garlic paste - 1 tsp
  6. Self-raising flour - 1 cup
  7. Salt to taste
  8. Black pepper powder, to taste
  9. Dried oregano - 1/2 tsp


Method :

1.  Combine the buttermilk, salt, red chilly powder, ginger garlic paste in a large bowl and add the chicken, spooning the buttermilk over it to coat.  Cover and refrigerate for about 8 hours preferably overnight.

2.  In a large mixing bowl, put together the flour, salt, dried oregano & pepper powder.   Remove the chicken pieces from the buttermilk mixture and dip them in the dry mixture until well coated.

3.  Transfer the chicken pieces in the baking tray and spread some butter evenly over the chicken. 

4.  Grill them on either sides until done.

Mint Thogayal - Perfect with Rice !!


Mint thogayal is simple, easy and very healthy.  This can be served with rice / rotis.  We can use coriander and curry leaves for this preparation.  


Ingredients :
  1. Mint leaves - 1 bunch, washed
  2. Oil - 1 tsp
  3. Urad dal - 1 tbsp
  4. Channa dal / Bengal Gram - 1 tbsp
  5. A pinch of hing
  6. Ginger - 1 inch 
  7. Garlic - 4 pods
  8. Red chillies - 5 to 6 nos
  9. Tamarind paste - 1 tsp 
  10. Salt to taste
  11. Coconut, grated - 1/4 cup (optional)

Method :

1.  Heat oil in the pan, add urad dal, bengal gram, red chillies, ginger, garlic and hing.  Saute.

2.  Add mint leaves and tamarind paste.  Saute for one min and switch off the flame.  (Don't overcook the greens)

3.  Allow the mixture to cool completely.

4.  Coarsely grind the mixture along with the coconut and salt.  


Serve.
