Swiss Raclette with Pickles - Just delicious!

Famous for its cheese and chocolate, Switzerland is the home of gourmet cheeses and perhaps the best chocolate in the world.  
 Not to be missed, of course is the Swiss Raclette, a signature Swiss dish that has a block of the semi-firm cow’s milk cheese, Raclette, heated in front of an open fire to melt the surface, and then the melted cheese is scraped onto diners’ plates and served with potatoes, bread & pickled onion and cucumber. The Swiss Raclette at Seven Corners, which I tasted, had the cheese served with fried potato wedges, mini pickled onions and slices of pickles. 


1 1/2 lb Swiss raclette cheese, cut into slices

Side dishes

  • Pickled cucumber
  • Pickled onions
  • Bread
  • Raclette spice powder

1.  Melt the cheese slices in a pan. 

2.  Meanwhile, spread the bread slices & pickles in the plate.

3.  Once the cheese is melted, spread it over the bread slices.

4.  Sprinkle some raclette spice mix over the bread.

Serve immediately.

Prawn Biryani - Restaurant style !!

This king prawn biryani is the perfect weekend treat. It takes a little time to cook but the end result is so worth it! Plus it leaves your whole house smelling absolutely delicious! Don’t be put off by the number of ingredients – most of them are spices and there is actually only a small amount of prep or chopping involved.

Ingredients :

  1. Prawns -750 g
  2. Turmeric powder - 1/2 tsp
  3. Chilly powder - 1 tsp
  4. Salt to taste
  5. Basmati rice - 2 cups
  6. Oil - 2 tbsp
  7. Ghee - 2 tbsp 
  8. Garlic - 7 pods
  9. Ginger - 1 inch
  10. Shallots - 10 nos
  11. Green chillies - 2 nos
  12. Red chillies - 3 nos
  13. Coconut pieces - 1 tbsp
  14. Coriander leaves
  15. Mint leaves
  16. Bay leaf
  17. Cinnamon stick - 1 no
  18. Cloves - 3 nos
  19. Cardamom - 2 nos
  20. Sliced onion - 2 medium sized
  21. Coconut milk - 2 cups
  22. Tomatoes - 2 medium sized
  23. Coriander powder - 1 tsp

Method :

1.  Mix cleaned prawns, 1/2 tsp turmeric powder, chilly powder & salt.  Marinate the prawns for at least 30 mins.

2.  Clean & soak the basmati rice in water for 30 mins.

Biryani paste :

3.  In a  a mixer, add garlic, ginger, shallots, red chillies, coconut pieces, green chillies, coriander leaves, mint leaves & grind them smoothly using little water.  Keep aside.

4.  Heat 1 tbsp of oil & ghee in the pressure cooker, add bay leaf, cinnamon, cloves, cardamom & sliced onions. Sauté till golden brown.

5.  Add spice paste, marinated prawns & coconut milk.  Mix and cook for few mins.

6.  Meanwhile, in a separate pan add 1 tbsp of oil, chopped tomatoes, coriander leaves, mint leaves & salt. Cook them till mushy.

7.  Now add the tomato mixture to the prawn masala.

8.  Add salt to taste, coriander powder & water(if required).  Mix

9.  Pressure cook the biryani for 10 mins on high and 5 mins on low flame or until the biryani is done.

Serve with raita.

Tandoori Chicken without Oven

Tandoori chicken 
is named after tandoor in which the dish is traditionally prepared.  Tandoori Chicken is marinated in curd and other spices , then grilled in tandoor after few hours, which gives a mesmerizing and lip smacking flavor to the chicken making it dry and juicy at the same time.

Though Tandoori Chicken is preferably cooked in tandoor or in oven, but here the recipe which I am presenting  and have followed since ages is cooked in a non stick pan and then grilled on gas stove for the grilling effect. Make Tandoori Chicken Without oven & without hassle.

Ingredients :

  1. Chicken pieces - 750 gms
  2. Turmeric powder - 1/2 tsp
  3. Chilly powder - 1 tsp
  4. Ginger garlic paste - 1 tsp
  5. Yoghurt - 1/2 cup
  6. Salt to taste
  7. Tandoori masala powder - 1 tbsp
  8. Oil 
  9. Unsalted butter - 1 tbsp

Method :

1.  Mix and marinate the chicken with turmeric powder, chilly powder, ginger garlic paste, salt, tandoori masala & yoghurt for at least 1 hr.  Preferably 4 hours or overnight is best.

2.  Heat grill pan or heavy bottomed frying pan, add marinated chicken pieces and drizzle some oil around.

3.  Now spread the unsalted butter over the chicken pieces and cook them for 15 to 20 mins or until the chicken pieces are well cooked on either sides.

Serve warm.

Green Apple Thokku | Chutney - Perfect with rice !!

Green Apple Thokku | Chutney -
 a spicy, tangy lip-smacking south Indian relish or chutney made with apples! With this gorgeous fruit in full season, this thokku is the perfect spicy way to enjoy fall flavors! 

Ingredients :

  1. Green apple, medium sized - 2 nos
  2. Oil - 4 tbsp
  3. Salt to taste
  4. Turmeric powder - 1/4 tsp
  5. Sambar powder - 1 tbsp
  6. A pinch of Hing
  7. Mustard seeds - 1/2 tsp
  8. Spice powder - 1 tsp (Roast & grind together 1/2 tsp of mustard seeds and 1/4 fenugreek seeds)

Method :

1.  Heat 2 tbsp of oil in the pan.  Add chopped green apple, turmeric powder, hing, salt & sambar powder.  Sauté for 5 mins over medium heat.

2.  Bring the cooked apples to room temperature & grind them coarsely.

3.  Heat 2 tbsp of oil in the same pan, add 1/2 tsp of mustard seeds.  

4.  Add grounded apple paste & cook over medium heat for 10 mins or until done.

5.  Once the chutney starts separating from the pan, add spice powder.  Sauté for few mins.

Serve with rice.

Pongal is the harvest festival of Tamil Nadu. The enthusiasm and the zeal of Tamilians comes alive during the four day festival. Pongal literally means "boiling over". This festival is the biggest event of the year.

The four day festival consists of Bhogi-Pongal, Surya-Pongal, Mattu-Pongal and Kanyapongal.

Pongal is a unifying festival in my family. On this day, we prepare atleast two varieties of pongal & exchange it to all my friends & neighbours near by. Pongal is all about spreading small amount of love and joy in the neigbouring homes and enjoy the festival with family and friends.

Ingredients :
  1. Rice - 1 cup
  2. Palm Jaggery | Karuppati - 2 cups (as per ur taste)
  3. Milk - 2 cups
  4. Water - 1 plus 1/2 cup cups 
  5. Cashewnuts
  6. Crushed Cardomoms - 5 nos
  7. Edible camphor - a pinch 
  8. Ghee - 1/4 cup 
  9. Raisins (kishmish) - 1 tbsp

Directions :

1.  Pressure cook the rice with 2 cups of milk & a cup of water for 3 to 4 whistles.

2.  Melt jaggery in 1/2 cup of water over a medium flame.  Dissolve the jaggery completely.

3.  Smash the cooked rice & add them to the jaggery water.  Mix well without any lumps. Cook the pongal will it separates from the sides of pan. It takes around 10 mins over medium heat.

4.  Fry the cashew nuts, cardamom, edible camphor and raisins in the ghee & add it to the sweet pongal.

Mix well.

Chettinad Fish Fry - Super Delicious !!

Chettinad Fish Fry Recipe
 is a delicious and spicy preparation of fish made in the Chettinad region of South India. You can use any type of firm fleshed fish to make this recipe.  You can serve this with steamed rice or as starter. 

Ingredients :

  1. Fish slices (Cleaned) - 10 nos
  2. Turmeric powder - 1/2 tsp
  3. Chilly powder - 1 tsp
  4. Rice flour - 1 tbsp
  5. Salt to taste
  6. Tamarind paste - 1/4 tsp
  7. Chopped coriander leaves
  8. Cooking oil

Method :

1.  Clean the fish slices.

2.  Add and mix turmeric powder, chilly powder, rice flour, salt, tamarind paste & chopped coriander leaves with little water (if required) to the fish slices.  

3.  Marinate the fish for at least a hour.

4.  Heat griddle or pan over the medium heat, add the marinated fish slices & fry them either sides.  Drizzle some oil around.

5.  Continue to fry till the fish gets cooked and crisp. The fish will appear flaky when it’s cooked.
