Bread Rolls


Stuffed bread rolls are most popular Indian tea snack.  Soaked slices of bread are filled with spicy potato stuffing and then deep fried in oil makes them a mouth watering appetizer.  We can substitute the stuffing with mutton kheema or anything of your choice.

Ingredients :

  1. White bread slices - 10 nos
  2. Oil - 1 tsp plus for deep frying
  3. Onion - 2 no
  4. Potatoes - 3 large sized
  5. Turmeric powder - 1/4 tsp
  6. Chilly powder - 1 tsp
  7. Salt to taste
  8. Ginger garlic paste - 1 tsp
  9. Cumin powder - 1/2 tsp
  10. Coriander powder - 1 tsp
  11. Garam masala - 1 tsp
  12. Lemon juice - 1 tsp
  13. Coriander leaves 

Method :

1.   Boil & mash the potatoes.  Heat oil in the pan, add finely chopped onions, turmeric powder, ginger garlic paste & salt to taste.  Saute till tender.

2.   Add chilly powder, coriander powder, cumin powder & garam masala.  Saute for 5 more mins.

3.   Add mashed potatoes, lemon juice & coriander leaves.  Cook till done.  Keep aside.

4.   Cut the edges of bread & dip the slices in the water.  Gently squeeze the water by pressing it in your palms.

5.   Place the potato stuffing in the centre of this bread & roll them, sealing the edges.

6.   Deep fry the bread rolls till golden brown colour.


Serve hot with ketchup.

Madras Filter Coffee


Fresh decoction, fresh milk and a spoonful of sugar are what we need to kick start our mornings.  I use traditional coffee filter for making this frothy degree coffee everyday.

Ingredients :
  1. Coffee Powder - 3 tsp
  2. Hot water - 1 cup
  3. Milk - 1 cup
  4. Sugar to taste

Method :

1.   Take the traditional coffee filter strainer.  On the top portion which has small holes in it, add coffee powder.  Cover & press it with the umbrella handle.  Pour the hot water over the coffee powder & cover it with a lid.  Set aside for 10 to 15 mins.

2.  Thick coffee decoction will be collected in the bottom container of the coffee filter.  

3.  Add and mix required amount of decoction, milk & sugar in the serving cup.


Serve hot.

IFC (Indian Fried Chicken)


Ingredients :

  1. Chicken legs 
  2. Flour - 1 cup
  3. Bread crumbs - 1/2 cup
  4. Egg - 1 no
  5. Ginger garlic paste
  6. Chilly powder - 1 tbsp
  7. Lemon juice - 1 tbsp
  8. Salt to taste
  9. Curry leaves
  10. Coriander leaves 
  11. Water (as needed)
  12. Oil for deep frying

Method :

1.    Marinate the chicken pieces with 1/2 tbsp of chilly powder, ginger garlic paste, salt & lemon juice for one hour.

2.   Mix together flour,  bread crumbs & salt.  Keep aside.

3.   In a another bowl, mix together egg, 1/2 tbsp of chilly powder, curry leaves, coriander leaves & salt to taste.

4.  Heat oil in the medium flame, dip the marinated chicken pieces in the egg mixture first and then in the flour mixture.  Deep fry them till golden brown.


Serve hot.

Masala Chicken Roast


Ingredients :

  1. Chicken - 500 gms
  2. Onion - 2 nos
  3. Tomato - 1 no
  4. Ginger - 1 small sized
  5. Garlic - 4 pods
  6. Red chilly powder - 1 tsp
  7. Turmeric powder - 1/4 tsp
  8. Cinnamon - 1 stick
  9. Cloves - 3 nos
  10. Cardamom - 1 no
  11. Salt to taste
  12. Oil 

Method :

1.   Grind together the onion, tomatoes, ginger, garlic, cinnamon , cloves, cardamon & mix it with red chilly powder, turmeric powder & salt to taste.

2.   Marinate the chicken pieces with the grounded masala for an hour.

3.   Heat oil in the pan, fry the chicken till cooked & looks dry.


Serve with rice.
