Mango Salad - Spicy & Sweet !!


Ingredients :

  1. Ripe mango cubes - 1 1/2 cups
  2. Olive oil - 1 tbsp
  3. Small onion, chopped - 1 no
  4. Lemon juice - 1 tsp
  5. Red chilli flakes for seasoning
  6. Pinch of salt
  7. Finely chopped coriander leaves - 1 tbsp

Combine all the ingredients and serve chilled. 


Spaghetti in Garlicky Mushrooms - Delicious Treat !!


Ingredients :

  1. Olive oil - 2 tbsp
  2. Mushrooms, thickly sliced - 250 gms
  3. Garlic, thinly sliced - 2 clovfes
  4. Small bunch of parsley
  5. 1 celery stick, finely chopped
  6. Onion, finely chopped - 1 no
  7. Tomato - 4 nos
  8. Red chilli, deseeded and finely chopped - 1/2
  9. Spaghetti - 300 gms

 Method :

1.  Heat 1 tbsp of oil in a pan, add mushrooms and fry for 3 mins.

2.  Add finely sliced garlic and fry for one more min and then tip into a bowl with the parsley.

3.  Heat 1 tbsp of oil in the same pan and add onion & celery.  Cook until lightly coloured.


4.  Stir in the chopped tomatoes, chilli and salt to taste.  Cook for 10 mins or until thickened.  

5.  Meanwhile boil the spaghetti, then drain.

6.  Toss with the sauce, top with the garlicky mushrooms, then serve. 


Avocado n Mint Chutney Spread Toast - Healthy Breakfast !!


Ingredients :

  1. Whole wheat bread (or your choice) - 4 slices
  2. Mint Chutney 
  3. Avocado - 2 medium sized
  4. Lemon juice - 1 tsp
  5. Salt to taste
  6. Black pepper powder - 1/2 tsp
  7. Red chilly flakes - 1/2 tsp
  8. Dried Parsley - 1/2 tsp
  9. Olive oil - 1 tsp
  10. Garlic powder - 1/4 tsp
For Mint chutney :
  1. Mint leaves - 1/2 cup
  2. Coriander leaves - 1/2 cup
  3. Salt to taste
  4. Onion - 1/2 no
  5. Oil - 1 tsp
  6. Urad dal - 1 tsp
  7. A pinch of hing
  8. Ginger prices - 1/2 inch
  9. Garlic - 1 pod
  10. Tamarind pulp - 1/2 tsp
  11. Grated coconut - 1/4 cup

Method :

For Mint chutney :

1.  Heat oil in the pan, add urad dal, hing, ginger, garlic, sliced onion, mint leaves, coriander leaves and salt to taste.  Cook them until done.

2.  Grind the above mixture along with the tamarind pulp and grated coconut to coarse chutney.


For Avocado spread :

3.  Smash and mix together the avocado, salt, black pepper powder, dried parsley, olive oil, red chilly flakes, lemon juice and garlic powder.

For sandwich :

4.  Toast the bread and spread the mint chutney and avocado evenly.


Delicious and healthy avocado toast is ready to serve.

Cookie Cake - Just delicious !!


Ingredients :
  1. All purpose flour - 1 cup
  2. Baking soda - 1/2 tsp
  3. Salt - 1/4 tsp
  4. Unsalted butter, melted - 1/4 cup
  5. Brown sugar - 1/4 cup
  6. Granulated sugar - 1/4 cup
  7. Eggs - 2 nos
  8. Vanilla extract - 2 tsp
  9. Semisweet chocolate chips - 3/4 cup

Method :

1.  Preheat the oven to 180 C.  Grease and line up the baking tin with parchment paper.

2.  Sieve together all purpose flour, baking soda and salt.  Set aside.


3.  Whisk together the butter, eggs, sugar (both brown and granulated) and vanilla extract.  

4.  Mix the dry ingredients in the wet ingredients along with the chocolate chips.  Mix until a cookie dough forms.

5.  Spread the cookie dough in the prepared pan and bake it for 18 mins.

Eggless Pineapple Upside Down Cake - Perfect party cake !!!


Perfect eggless cake for any occasions.


Ingredients :

  1.  All purpose flour - 150 g
  2. Butter - 100 g
  3. Milk powder - 100 g
  4. Sugar, powdered - 150 g
  5. Milk - 170 ml
  6. Pineapple syrup - 2 tbsp
  7. Vanilla extract - 1/2 tsp
  8. Baking powder - 1 tsp
  9. Baking soda - 1/2 tsp 

For the Toppings :

  1. Unsalted butter - 1/4 cup (55 gms)
  2. Brown sugar -  3/4 cup
  3. Pineapple (Fresh / Canned)
  4. Candied cherries (optional)


 Method :


Grease and line up the baking pan with parchment paper.  Preheat the oven at 180C.

For the topping :

1.   Melt the butter & brown sugar together over the medium flame.

2.   Evenly spread the butter in the prepared baking pan.  Arrange the pineapples & cherries over the sugar mixture.


For the cake batter :

1.   Sieve together the flour, baking powder, baking soda & milk powder.

2.   Beat the sugar and butter until light and fluffy.  Add the vanilla extract & pineapple syrup.

3.   Add the flour mixture alternating with the milk, ending with dry ingredients.

4.   Pour the cake batter over the pineapple slices & spread evenly.

5.   Bake it for 45 mins or until done.
