Peanut Chaat - Quick & easy snack

Quick and easy chat which serves as a best starter for the get-together parties.  We can make many variations in this by adding tamarind chutney, green chutney, papadis, yoghurt, sev, boiled chick peas, potatoes or even pani puris.  It taste really yummy :)

Ingredients :
  1. Roasted peanut (or boiled peanut) - 1 cup
  2. Onion (Finely chopped) - 1/4 cup
  3. Tomatoes (Finely chopped ) - 1 no
  4. Green chillies (very finely chopped) - 1 no
  5. Red chilly powder - 1/2 tsp (to taste)
  6. Finely chopped corriander leaves - 1 tbsp
  7. Lemon juice - 1 tbsp
  8. Chaat masala - 1/2 tsp
  9. Dry mango powder - 1/4 tsp
  10. Cucumber (finely chopped) - 1 tbsp
  11. Salt to taste

Method :

Mix together all the ingredients & serve immediately.

Phirni

As the festival season is approaching, most of the houses will be flavoured with different sweets & savouries items.  And this is one of the famous Indian dessert made by soaking and grinding the rice & boiling them in the milk with the flavour of cardamom powder and saffron strands.  Very easy to make & taste delicious.  Perfect sweet for diwali :)

Ingredients :
  1. Rice - 1/4 cup
  2. Sugar - 3 tbsp or to taste
  3. Milk - 3 cups
  4. Condensed milk - 1/4 cup
  5. Cardamom powder - 1/2 tsp
  6. Blanched almonds - 3 tbsp
  7. Saffron strands (optional)

Method :

1.   Soak the rice for one hour and grind them coarsely.

2.   Bring milk to boil in the heavy sauce pan & slowly add the rice and sugar to taste.  Stir constantly till the milk reduces to half the quantity.  

3.   At this stage add the condensed milk, saffron strands (optional) and cardamom powder.  

4.   Remove from heat and add almonds.

Gobi Capsicum Sabzi (Partially Microwave)

Flavour of cauliflower and capsicum go well together & taste absolutely delicious for rotis, chapathis & naan.  Cauliflower and bell peppers are more nutricious and very rich in vitamin & fiber.  Try this & you will like it :)

Ingredients :
  1. Gobi / Cauliflower florets - 2 cups
  2. Green capsicum / Bell peppers - 1 cup 
  3. Oil - 1 tbsp
  4. Onion - 2 nos
  5. Tomato - 1 no
  6. Ginger garlic paste - 1 tsp
  7. Turmeric powder - 1/4 tsp
  8. Chilly powder to spice
  9. Salt to taste
  10. Garam masala - 1 tsp
  11. Corriander leaves for garnishing

Method :

1.   Clean the cauliflower florets & microwave for about 7 to 8 mins or until cooked.

2.   Meanwhile heat oil in the frying pan, add finely chopped onions and saute till tender.

3.   Add turmeric powder, ginger garlic paste, chopped tomatoes and salt to taste.  Saute.

4.   Add chilly powder & capsicum.  Cook for 2 mins.

5.   Finally add the cooked cauliflower florets, garam masala & cook together for about 2 mins. 

6.   Add finely chopped corriander leaves.

Serve with rotis.

Cabbage Poriyal - Microwave version

Simple & easy side dish, perfect with rice.

Ingredients :
  1. Cabbage - 1 small sized
  2. Oil - 1 tbsp
  3. Mustard seeds - 1 tsp
  4. Urad dal - 1 tsp
  5. Curry leaves - 1 tbsp
  6. Red chillies - 5 nos
  7. Salt to taste
  8. Grated coconut - 1/4 cup

Method :

1.   Chop the cabbage and microwave cook for 10 to 12 mins or until done.  

2.   Meanwhile, heat a tbp of oil in the pan and temper mustard seeds, urad dal, red chillies & curry leaves.

3.   Now add the cooked cabbage to the seasonings & grated coconut.  Fry them for 2 mins & add salt as required.

Serve with rice.

Rava Ladoo - Vijaya Dashami special

Happy Vijaya Dashami to all the readers.  Rava ladoo most popular Indian sweet is made with semolina.  More the quantity of ghee we add it taste extremely delicious.  To make it rich I added cashewnuts, almonds & raisins.  When stored in air tight container, it will stay for one week too. Perfect snack for kids & to celebrate the festival fun.

Ingredients :
  1. Rava - 1 cup
  2. Sugar - 3/4 to 1 cup
  3. Grated coconut - 1/4 cup
  4. Milk or water - 1/2 cup
  5. Saffron strands - a pinch
  6. Cardamom powder - 1/4 tsp
  7. Nuts (cashew nuts, raisins) - 1/4 cup
  8. Ghee or oil (be generous)  - 2 tbsp

Method :

1.   Roast the rava in the ghee or cup till light golden brown in color.

2.   Then add the sugar & roast for further 2 mins.

3.   Meanwhile, roast the nuts and keep aside.

4.   Now, add the grated coconut & fry for few mins.

5.   Add the cardamom powder, saffron strands and roasted nuts.   Combine.

6.   Finally, add the milk & switch off the flame once well combined.

7.   Make balls out of this mixture when it is still warm.  More milk can be added if needed.

8.  Cool the balls completely and store it in the air tight container.

Corn Chaat - From the street

Quite a popular street chaat available in most of the places nowdays.  Healthy & nutricious snack yet very simple to make.  It taste simply delicious with less ingredients.  Kids will love this :)  

Ingredients :
  1. Corn kernels - 1 cup
  2. Melted butter - 1 tsp
  3. Salt to taste
  4. Black pepper - 1/2 tsp
  5. Chaat masala - 1/2 tsp
  6. Lime juice - 1 tsp

Method :

1.   Steam cook the corn kernels.

2.   Mix together all the ingredients & serve.
