Badam (Almond) Katli


Delicious badam katli is almost similar to kaju katli.  This taste simple delicious and easy to make.  Perfect sweet for festivals.  Try and enjoy it !!


Ingredients :

  1. Almonds - 3/4 cup
  2. Hot water - 3/4 cup
  3. Sugar - 3/4 cup
  4. Water - 1/2 cup
  5. Saffron - few strands
  6. Cardamom powder - 1 tsp
  7. Ghee / Clarified butter - 3 tbsp

Method :

1.  Soak the almonds in the hot water for 1 hour.  Peel off the skin and dry them completely.  Grind them to fine powder.

2.  Mix together sugar and 1/2 cup of water and bring it to boil.

3.  Prepare single thread consistency sugar syrup.

4.  Add saffron strands, cardamom powder and grounded almond powder to the sugar syrup.  Keep stirring continuously over the medium flame.


5.  Continue to mix until the mixture starts to leave the pan.  

6.  Grease the dish with ghee and transfer the almond mixture to the dish.  Level the dough evenly and cut them in the desired shape.  Allow it to set for some time.  You can also decorate it with silver leaf.


Serve.

Savoury French Toast - Delicious !!


Savoury french toast is simple and easy to make with few ingredients.  This can be served as a breakfast or snack.  I like to serve this tomato ketchup.



Ingredients :

  1. Bread (white / brown) - 4 slices
  2. Egg - 4 nos
  3. Milk - 1/4 cup
  4. Salt to taste
  5. Green chillies, chopped - 3 nos
  6. Coriander leaves, chopped - 1 tbsp
  7. Pepper powder - 1/2 tsp
  8. Ginger garlic paste - 1 tsp
  9. Turmeric powder - 1/4 tsp
  10. Onion, finely chopped - 2 tbsp
  11. Capsicum, finely chopped - 2 tbsp
  12. Oil

Method :

1.  Remove the edges of the bread and slice them in desired shape.

2.  In a big bowl, whisk together egg, milk, salt, green chillies, coriander leaves, pepper powder, ginger garlic paste, turmeric powder, onion and capsicum.  

3.  Heat the pan, dip the bread slices in the egg mixture and cook them on either sides.  Drizzle some oil around the edges.


Serve warm.

Mint n Coriander Thogayal | Thokku



Mint and coriander thogayal is simple, easy and very healthy.  This can be served with rice / rotis.  We can use only mint or coriander or mix of of mint, coriander and curry leaves for this preparation.  


Ingredients :

  1. Mint leaves - 1 bunch, washed
  2. Coriander leaves - 1 bunch, washed
  3. Oil - 1 tsp
  4. Urad dal - 1 tbsp
  5. Channa dal / Bengal Gram - 1 tbsp
  6. A pinch of hing
  7. Ginger - 1 inch 
  8. Garlic - 4 pods
  9. Red chillies - 5 to 6 nos
  10. Tamarind paste - 1 tsp 
  11. Salt to taste
  12. Onion - 1 small sized
  13. Coconut, grated - 1/4 cup (optional)

Method :

1.  Heat oil in the pan, add urad dal, bengal gram, red chillies, ginger, garlic, hing and chopped onion.  Saute.

2.  Add mint leaves, tamarind paste and coriander leaves.  Saute for one min and switch off the flame.  (Don't overcook the greens)


3.  Allow the mixture to cool completely.

4.  Coarsely grind the mixture along with the coconut and salt.  


Serve.

Ginger and Cardamom infused Green Tea !!!


Green tea, ginger and cardamom are some of the natural herbs, we can put together to make this delicious tea.  Enjoy the tea either hot or cold.


Ingredients :

  1. Water - 1 1/2 cup
  2. Ginger, crushed - 1/2 tsp
  3. Cardamom - 2 nos
  4. Green tea - 1 tsp
  5. Lemon juice (optional)
  6. Honey (optional)

Method :

1.  Boil the water.  Add ginger and cardamon and simmer on medium heat for 5 mins until colour changes.

2.  Add green tea, lemon and honey.

3.  Boil for another min.

4.  Cover pot and turn off heat.  Let tea steep for 3 - 4 mins.


Serve.

Homemade Dried Basil !!!


Try to make your own dried basil and enjoy its flavour !!

Ingredients :

  1. Fresh basil leaves 

Sun Dry method :

Wash the basil leaves and spread them in a kitchen towel.  Sun dry them till crispy (It takes 1- 2 days approx).  Crumble the dried basil leaves and store them in a air tight container.

Microwave method :

Wash the basil leaves and spread them in a microwave safe plate.  Microwave them over high for 30 mins on one side and turn the leaves and microwave for another 30 mins. If necessary, microwave for another 30 mins or until crispy.  Allow it to cool completely.  Crumble and store.


Refrigerator method :

Wash the basil leaves and wrap them inside the paper tissue.  Keep them inside the fridge for few days.  Remove them once it's dry and crispy.  Store it an air tight container.

Oven Method :

Wash the basil leaves and spread them in a parchment paper.  Keep the parchment paper in the baking tray and bake them in the lowest setting (150 C) for 40 mins.  Baking time always varies, so bake till crispy and dry.  Cool them completely and store.

Tomato Kurma | Thakkali Kurma | Tomato Korma !!


Easy, delicious and simple tomato kuruma taste great with idly, dosa, idiyappam, rotis and appam.  Instead of coconut, we can use almond / cashew nut paste for this recipe.  Addition of roasted gram(1tbsp) and poppy seeds (1 tsp) will make the kurma thick and distinct taste.


Ingredients :

  1. Tomatoes, chopped - 3 medium sized
  2. Onion, chopped - 1 no
  3. Oil - 1 tbsp
  4. Cinnamon stick - 1" inch
  5. Cloves - 3 nos
  6. Cardamom - 2 nos
  7. Bay leaf - 1
  8. Ginger garlic paste - 1 tbsp
  9. Turmeric powder - 1/4 tsp
  10. Green chilly - 2 nos
  11. Chilly powder - 1 tsp
  12. Coriander powder - 1 tsp
  13. Salt to taste
  14. Coconut, grated - 1/4 cup
  15. Fennel seeds - 1/2 tsp
  16. Coriander leaves for garnishing

Method :

1.  Grind together coconut and fennel seeds to smooth paste.  Keep aside.

2.  Heat oil in the pan, add cinnamon, cloves, cardamom, bay leaf and finely chopped onions.  Saute for few mins.

3.  Add ginger garlic paste, green chillies, turmeric powder and salt to taste.

4.  Add chopped tomatoes, chilly powder, coriander powder and cook for few mins.  


5.  Once the tomatoes are cooked, add coconut paste and enough water.  Cover and cook till done.

6.  When oil separates, garnish it with coriander leaves and serve.


Serve with dosa, idly and chapati.

Pasta in white sauce for babies !!!


This is very simple pasta recipe which is suitable for babies and toddlers.  I started feeding this dish to my son from his 10th month.  If the pasta size is little big for the babies, pulse them in the food processor and then cook them as instructed in the package.  We can cook this recipe by adding vegetables like sweet corn, sweet potato, beans and so on.  


Ingredients :

  1. Tiny sized pasta - 3 tbsp
  2. Water
  3. Salt
  4. Oil - 1 tsp
  5. Butter - 1/4 tsp
  6. Flour - 1 tsp
  7. Garlic powder - a pinch
  8. Milk 
  9. Salt to taste
  10. Black pepper powder - a pinch
  11. Italian seasoning (Oregano, basil) - 1/4 tsp
  12. Cheese (Parmesan, cheddar) - optional

Method :

1.  Cook the pasta in the salted boiling water along with a tsp of oil as instructed in the package.

2.  Drain the water and keep the pasta aside.

3.  Heat butter in the pan, add garlic powder and flour.  Roast them for few mins.  Gradually add the milk, keep stirring continuously until smooth.


4.  Add the pasta, salt, pepper powder, seasonings and keep stirring over low flame for 8 mins.  

5.  Switch off the flame and add cheese.


Serve warm.

Creamy Avocado n Parsley Pasta !!


Avocados are really super food loaded with nutrients and other health benefits.  This pasta sauce is rich and creamy.  The ingredients are super healthy.  I used parsley in this recipe, instead we can use basil or spinach for variations.   This is absolutely ADDICTING !!!


Ingredients :
  1. Pasta, of your choice - 10 oz
  2. Avocado - 2 medium sized
  3. Garlic - 2 cloves
  4. Parsley - 1/4 cup
  5. Halved cherry tomatoes - 3/4 cup
  6. Sliced onions - 1/4 cup
  7. Olive oil - 4 tbsp
  8. Balsamic vinegar - 1/2 tbsp
  9. Salt to taste
  10. Black pepper powder to taste
  11. Lemon juice - 1 tbsp
  12. Italian seasoning - 1/2 tsp 

Method :

1.   Boil the water and add salt, a tbsp of olive oil and pasta.  Cook the pasta according to the package instruction.

2.  Meanwhile, in a food processor blend together avocado, garlic, parsley, salt, oil, pepper and lemon juice until creamy.


3.  In a serving bowl, toss the tomatoes, sliced onion, olive oil, balsamic vinegar, Italian seasoning, salt and pepper.

4.  Add the pasta to the bowl along with avocado mixture.  Mix together until well combined.


Serve immediately.

Sprouted Ragi Porridge for babies & toddlers !!!


Ragi porridge is really nutritious and healthy when consumed regularly.  I started this porridge for my son from 6th month.  Gradually, increase the quantity to your babies and we can add nut powder to this porridge for babies above 10 months.  Try to use homemade sprouted ragi powder for this preparation.  Breast milk / formula milk is recommended for the babies. A pinch of cardamom powder can be used for flavour.  


Ingredients :
  1. Sprouted Ragi flour - 1 tbsp
  2. Water, as required
  3. Palm Sugar / jaggery, as needed
  4. Breast Milk / formula milk 
Method :

1.  Dissolve the jaggery(if using) in the hot water and filter it.  

2.  Stir in the ragi flour.  Break up the lumps.

3.  Cook on a medium flame and cool it completely.

4.  Add the milk and adjust the consistency.


Serve immediately.

Microwave Eggless Coffee Walnut Cake - Just 2 mins !!!


You need just 5 mins to make this delicious eggless coffee walnut cake in microwave.  We can substitute nuts of your choice.  Increase the baking time if the microwave watts is less.  Serve this warm with your favourite ice-cream.


Ingredients :

  1. All purpose flour - 3 tbsp
  2. Baking powder - 1/8 tsp
  3. Baking soda - a pinch
  4. Condensed milk - 3 tbsp
  5. Melted butter - 2 tbsp
  6. Milk - 4 tbsp
  7. Coffee powder - 2 tsp
  8. Walnuts - 1 tbsp

Method :

1.  Sieve together flour, baking soda and baking powder.  Mix well.

2.  Mix together milk and coffee powder.

3.  Stir together condensed milk, melted butter, milk (with coffee) in a microwaveable mug.


4.  Add the dry mixture and walnuts to the wet ingredients.  Mix well.

5.  Microwave at 850 watts for about 2 mins.


Serve warm.

Cumin Crisps /Farsi Puri / Cumin Seeds puri / Jeera Puri


Cumin crisp is a savoury snack, with the flavour of cumin seeds.  This can be made even without semolina and stored in airtight container for up to three weeks.   For flaky texture, use chilled soda water for kneading the dough.  Perfect snack to serve unexpected guests.


Ingredients :

  1. All purpose flour (Maida) - 1 1/2 cups
  2. Semolina - 1 tbsp
  3. Salt to taste
  4. Cumin seeds - 1 tsp
  5. Black pepper powder - 1/2 tsp
  6. Aswan /Carom seeds - 1/4 tsp
  7. Chilled water (or) chilled soda water for kneading
  8. Oil 

Method :

1.  Sieve together flour, semolina and salt in a mixing bowl.

2.  Stir in cumin, carom seeds and black pepper powder.

3.  Rub in a tbsp of oil, add water and mix to form a firm dough.  Knead well.  Set aside for 15 mins.


4.  Break off marble-sized pieces and roll on a lightly floured surface into circle.   Dust some flour and fold in quarters.  

5.  Deep fry in moderately hot oil until lightly browned and crisp.  Remove and allow to cool before storing.


Store it in air-tight container.
