Vazhaipoo Vadai (Banana Flower Fritters)



Enjoy this simple, crispy and healthy banana flower fritters with a cup of hot tea.

Ingredients :
  1. Channa dal - 1 cup
  2. Vazhaipoo (Banana flower) - small sized
  3. Salt to taste
  4. Onion, chopped - 1 no
  5. Red chilly powder, to taste
  6. Fennel seeds - 1 tsp
  7. A pinch of hing
  8. Coriander leaves
  9. Oil for frying

Method :



1.  Soak the channa dal for atleast two hours.

2.  Clean & cook the vazhapoo (Banana flower) in the salted water.  Drain the water and grind them coarsely along with the dal - without adding water. 

2.  To the mixture, add finely chopped onions, red chilly powder, fennel seeds, hing, salt to taste & finely chopped coriander leaves.

3.  Heat oil in the deep frying pan.  Take a small portion of batter and flatten them with hands.  Drop them in the oil and fry them till crispy and done.  

4.  Drain the excess oil in the kitchen towel.

Serve warm.


Note :

1.  Don't add water while grinding the mixture.  If necessary, add a tsp of water.

2.  Retain a tbsp of soaked channa dal and mix them in the grounded mixture, for crunchy texture.

3.  We can also add finely chopped mint leaves and curry leaves for additional flavour.

Nimki



Nimki is a crispy snack which has a flavour of kalonji (onion seeds) and cumin seeds. It tastes savory like namakpaare. Nimki is one of the favorite evening deep fried snack which can be enjoyed with a hot cup of tea.


Ingredients :

For the dough :
  1. All purpose flour (Maida)- 1 cup
  2. Cumin seeds - 1/4 tsp
  3. Kalonji (onion seeds) - 1/4 tsp
  4. Salt to taste
  5. Ghee - 1 tbsp
  6. Red chilly flakes - 1/2 tsp
  7. Water, for kneading - 1/4 cup
  8. Oil for deep frying
  9. Cloves (optional)
For the paste :
  1. All purpose flour - 1 tbsp
  2. Oil - 1 tbsp
Others :
  1. Lavang or Black pepper corns (optional)
  2. Oil for deep frying
Method :


1.  Mix together flour, cumin seeds, kalonji, salt to taste, ghee and red chilly flakes.  The flour should resemble like bread crumbs.

2.  Slowly add water and prepare the dough.  The dough should be little hard (not a soft dough).  Cover & rest the dough for 10 mins.

3.  Meanwhile, in a small bowl - mix together flour (1 tbsp) and oil to a smooth paste.  Set aside.

4.  Now roll the dough in a slightly thin chapathi.

5.  Spread the flour & oil paste evenly throughout the chapathi. 

6.  Roll the dough tightly from one side and roll it till the end.  This helps in getting multiple layers in nimbi which makes it flakier.

7.  Take a knife and cut the dough carefully from one end at a gap of 1 inch or less.

8.  Roll the cut pieces into a circular shapes like puri and fold it in half and again fold it to form a triangular shape.

9.  While rolling prick the triangular shaped dough all the sides with the help of a fork, it avoids puffing up in the pan while deep frying.  Seal the edge using a cloves or black pepper corns.

10.  Heat oil in the frying pan over the medium heat, deep fry the nimki until crispy and golden brown in colour.


Enjoy with tea.

Palkova using Coconut

Pal kova is a classic Indian sweet, made during festival seasons.  I love the addition of grated coconut at the end to make it rich & unique.  Perfect dish for sweet lovers :)

Ingredients :
  1. Whole milk - 2 litres
  2. Sugar - 2 cups (to taste)
  3. Coconut grated(Without skin) - 1 tbsp

Method :


1.   Heat the milk in the non-stick pan over the low flame.  Stirring all the time.

2.   Once the milk reduced to half the quantity, add sugar.  Keep stirring.

3.  When the milk starts thickening, add grated coconut and  continue stirring.

4.  Keep stirring until the mixture is completely grainy like palkova & leaves the pan from sides.

Cool completely & serve at room temperature.

Garlic Shrimp Tapas (Gambas Al Ajillo )


Easy Spanish garlic shrimp is classic tapa dish that can be on your table in minutes.  Serve it for an appetizer or a main dish, just be sure to have lots of crusty bread on hand for dipping!

It is super easy, simple, and INCREDIBLY good. The mixtures of spices make the shrimp POP with flavor with hints of smokiness and heat. The garlic combined with the seasonings intensifies the flavor. 


Ingredients :
  1. Shrimps, peeled & deveined - 500 gms
  2. Olive oil - 3 tbsp
  3. Garlic, roughly chopped - 50 gms
  4. Salt to taste
  5. Black pepper powder - 1 tsp
  6. Fresh minced or dried parsley - 1 tbsp
Method :



1.  Heat oil in the frying pan.  Add finely sliced garlic and saute.


2.  Add shrimps & sprinkle salt and pepper to taste.  Stir to combine.


3.  Sprinkle some parsley.  Toss the shrimp.



Serve with bread.
