Rava Idli


Rava idli is one of my favourite South Indian breakfast.  It is very easy to make & taste great with grated carrot and green peas.  Healthy & wholesome meal for kids lunchbox too.  No need to ferment and the preparation time is just 20 mins.  Serve them hot with spicy tomato chutney or with your desired chutney.  


Ingredients :

  1. Rava /Semolina - 1 cup
  2. Buttermilk - 1 1/2 cup
  3. Grated carrot - 1/2 cup
  4. Green peas - 1/2 cup
  5. Coriander leaves 
  6. Oil - 3tbsp
  7. Mustard seeds - 1 tsp
  8. Channa dal - 1 tbsp
  9. Ural dal - 1 tsp
  10. Green chillies - 3 nos
  11. Ginger, grated - 1/2 tsp
  12. Curry leaves
  13. Onion, chopped - no
  14. Salt to taste
  15. A pinch of hing
  16. Eno Fruit salt / Baking soda - 1 tsp
Method :

1.   Heat oil in the pan, add mustard seeds, urad dal and channa dal.  Add finely chopped green chillies, curry leaves, ginger and chopped onion.  Saute for few mins.

2.   Add rava / semolina and roast them for few mins (without changing the color ).


3.   In a large bowl, add the roasted semolina, grated carrot, green peas, coriander leaves, salt to taste, Eno fruit salt and butter milk.  Mix together without any lumps.  The batter should be either very thick or runny.  Allow the batter to rest for 5 mins.

4.   Meanwhile, grease the idli pan with oil and pour the batter (sprinkle some coriander leaves on the top, if desired).   Steam the idli's  for 10 mins or until done.


Serve hot with chutney.

Cocoa Banana overnight Oats - Just delicious !!!!


Store in a glass jar or another airtight container and let the oats soak for at least three hours, ideally overnight.  A healthy breakfast hack to try, because it does all the magic while we sleep. Instead of almond milk, we can use regular milk preferable low fat - for healthier version   Serve them with your favourite toppings, delicious :) 


Ingredients :
  1. Rolled oats - 1/2 cup
  2. Almond milk - 1 cup (or milk)
  3. Honey - 1 tbsp
  4. Cocoa powder - 1/2 tsp
  5. Chia seeds - 1 tbsp 
  6. Yoghurt - 1 tbsp
  7. Banana, finely chopped / sliced
Method :

1.   Mix together rolled oats, almond milk, honey, chia seeds, cocoa powder & yoghurt in a airtight container.  Soak it at least for 3 hours ideally overnight.

2.  In the morning, you can add banana, nuts and other favourite toppings to your oatmeal.

Tomato salad with Toast !!!!


Tomato toast has become a breakfast staple and with good reason : It's healthy and the recipe is simple - toast topped with seasoned tomatoes.  With so much focus on consuming too much sugar, I thought I'd share with you the perfect sugar free breakfast. 


Ingredients :
  1. Bread slices of your choice
  2. Ripe Tomato - 2 nos, chopped
  3. Salt to taste
  4. Black pepper powder - 1/2 tsp
  5. Red chilly flakes - 1/2 tsp, optional
  6. Garlic powder - 1/4 tsp
  7. Fresh parsley or dry parsley
  8. Olive oil - 1 tsp

Method :

1.   Roughly chop the tomatoes and mix it together with salt, pepper powder, red chilly flakes, garlic powder, olive oil and parsley.


2.   Toast the bread slices ( I use garlic powder while toasting).

3.   Spread the tomato salad on each piece of toast and sprinkle some parsley (optional).


Serve immediately.

Homemade Fried Croutons !!!


I always love fresh croutons on hot soup / vegetable biryani / Salads.  Store bought croutons are usually too dry and flavourless.  Homemade croutons is super simple and best way of using leftover bread slices and more than that its healthy & delicious with added flavours....



Ingredients :
  1. 4 slices of bread diced into cubes
  2. Oil - 3 tbsp
  3. Garlic powder (optional) - 1/4 tsp
  4. Salt to taste
  5. Pepper powder
  6. Dried herbs, optional - 1/2 tsp

Method :

1.   Dice the bread slices into small cubes.

2.   In a mixing bowl, combine together oil, pepper powder, garlic powder, dry herbs and salt to taste. 

3.   Mix the diced bread cubes and roast them over the frying pan till crunch & golden brown on either sides.



Serve on salad or soups or anything that suits you....

Iyengar Bakery Khara Biscuit | Savoury Cookies | Masala Biscuit


 Cookies don't have to be served as a dessert or with coffee or tea, they can also be a nice party appetizer or a tasty snack.  This Iyengar bakery style khara biscuit is sure to tickle your taste buds.


Ingredients :

  1. All purpose flour - 200 gms
  2. Icing Sugar - 50 gms
  3. Butter - 100 gms
  4. Salt - 1 tsp
  5. Milk - 15 ml
  6. Green chillies, finely chopped - 2 nos
  7. Cumin seeds, roasted & coarsely crushed - 1 tbsp
  8. Ginger powder - 1/2 tsp
  9. Few Curry leaves, finely chopped
  10. Few coriander leaves, finely chopped

Method :

1.   Sieve together flour and salt together.  Keep aside.

2.   Cream together butter and icing sugar till the sugar dissolves.  Add milk and continue beating.

3.   Add in the flour mixture, green chillies, cumin seeds, ginger powder, curry leaves and coriander leaves.  Gently knead the dough and rest the dough for 10 mins.


4.   Preheat the oven at 180 C and line up the baking pan with parchment paper.

5.   Using the rolling pin, roll the dough and cut them in the desired shape.  Dust the working space with flour.

6.  Arrange the cookies in the prepared pan and bake them for 10 - 15 mins or until the golden brown.  Allow them to cool completely before storing them in an air tight container.

Chocolate Mug Cake - Just in 2 Mins !!!


Yesterday, I was craving chocolate for my dessert.  We didn't have any dessert in the house and I didn't want to run out to get anything,  so I thought of making this moist & chocolaty eggless mug cake.  All you need is very few ingredients and it is ready in just 2 mins in microwave.  Try this best moistest chocolate mug cake and serve it with whipping cream / ice-cream / chocolate sauce / powdered sugar.


Ingredients :
  1. All purpose flour - 3 tbsp
  2. Cocoa Powder - 1 1/2 tbsp
  3. Baking Powder - 1/8 tsp
  4. Baking Soda -  a pinch
  5. Butter, melted - 2 tbsp
  6. Condensed milk - 3 tbsp
  7. Milk - 4 tbsp 
  8. Chocolate chips / chunks - handful

Method :

1.   In a microwave safe mug, mix together flour, cocoa powder, baking powder and baking soda without any lumps.

2.  Add melted butter, condensed milk, milk and mix together without any lumps.

3.   Finally, add chocolate chips in the batter and microwave for 2 mins on high (Microwave -850 W).


Serve warm with whipped cream / ice-cream.


Note :

I divided one full mug cake batter into 2 small mugs for both of us.

Homemade Bread Crumbs (Using Oven)


Nothing beats homemade bread crumbs.

Homemade bread Crumbs seems simple and makes a difference and beat anything you buy at the store.  They are easy to make using old bread of your choice.  This time I used Vollkorn (Whole wheat) bread for making keema cutlet.  Toss the fresh crumbs with olive oil & your favourite seasoning for another variation. 


Ingredients :

  1. Bread slices of your choice

Method :

1.   Preheat the oven to 150 C.  Either trim crusts from the bread or leave them on.  Bread crumbs will be finer without the crusts too.

2.   Cut bread into small pieces and toss in the bowl of a food processor.  Process until bread forms fine crumbs.  Spread on a rimmed baking sheet and bake for 10 to 15 mins or until crumbs are golden and dry.

3.   Allow them to cool and place in an air tight container, then refrigerate or freeze.

Apple Jalebi !!!


Apple jalebi are soo delicious while warm.  Once they cool, loose their crunchiness and become very soggy.  Apples are dipped in the flour batter and fried till crispy.  Soak the fried apples in the cardamom flavoured sugar syrup for few seconds and garnish them with nuts and serve them with ice-cream for your choice.  Instead of cardamom we can substitute rose fragrant sugar syrup !!!


Ingredients :

  1. Apples - 2 nos, peeled & sliced in thin rings
  2. All purpose flour - 1 cup
  3. Dry yeast - 1/2 tsp
  4. Sugar - 3/4 tsp
  5. Salt - a pinch
  6. Oil - 1 tbsp
  7. Oil for deep frying
  8. Yellow colouring (optional)
For Syrup :
  1. Sugar - 1 cup
  2. Water - 1 cup
  3. Lemon juice  - 1/4 tsp
  4. Cardamom powder - 1/2 tsp
  5. Nuts, for garnishing (optional)

Method :

For sugar syrup :

1.   Boil the sugar and water together until one string consistency.   Allow add lemon juice while cooking.  Finally, add cardamom powder and set aside.


For the batter :

2.   Dissolve the dry yeast along with the sugar in luke warm water and keep aside for 10 mins.  

3.   Mix together flour, salt and oil.  Pour and mix the yeast mixture into dry ingredients and yellow colouring (optional).  The batter should resemble like pancake / dosa batter.  

4.   Let the batter sit aside for an hour for fermentation.

5.   Heat the oil over medium heat, dip the apple slices in the batter and deep fry until done.

6.   Once the jalebi's are done, dip them in the warm sugar syrup for few seconds and garnish them with nuts (optional).


Serve them warm with ice-cream.

Walnut Butterscotch Cake !!


A sweet, deep and nutty walnut butterscotch cake is  the perfect indulgent treat for any special occasion. 


Ingredients :

  1. Butter - 125 gms
  2. Brown sugar - 2 tbsp
  3. White sugar - 2 tbsp
  4. Honey - 2 tbsp
  5. Finely chopped walnuts - 1 cup
For Cake :
  1. All purpose flour - 1 2/3 cups
  2. Salt - 1/2 tsp
  3. Baking powder - 3 tsp
  4. Butter - 125 gms
  5. Sugar - 1/2 cup
  6. Eggs, beaten - 2 nos
  7. Milk - 1/4 cup
  8. Vanilla extract - 1/2 tsp

Method :

1.   Lightly grease the baking pan and line base with non-stick baking paper.  Preheat the oven to 190 C.

2.   To make nut topping, melt butter, sugar and honey in saucepan.  Stir in walnuts.  Pour nut mixture into prepared tin.


3.   To make cake, sift flour, salt and baking powder.  Rub in butter, add sugar and mix.  Pour eggs into centre, add milk and vanilla extract and mix well.

4.   Pour cake mixture on top of nut mixture.  Bake for 40 mins, then reduce heat to 180 C and bake for further 20 mins.   Turn out immediately onto a rack and remove paper.  Replace any nut topping that comes away - it will set in position as it cools.


Serve.

Spicy Guava Slices


Spiced guava slices is my childhood favourite street & beach food.  Ripped guava is sliced and spiced with red chilli powder and salt.  Try n enjoy it today !!!


Ingredients :

  1. Guava - 1 no, ripped
  2. Salt to taste
  3. Chilli Powder - 1/2 tsp

Method :

1.   Clean and dry the guava.  Slices them lengthwise.

2.   Mix together chilli powder and salt in a separate bowl.  

3.   Sprinkle chilli n salt mixture over the guava slices.


Serve.
