I started baking cakes listed in my personal cake list. And this is one of those. A little variation from the regular tiramisu yet easy to make. Very happy to see my cake turned out good & each of us enjoyed until the last bite. It's delicious :)
Ingredients :
For the cake :
- Eggs - 4 nos
- Vanilla essence - 1 tsp
- Castor sugar - 100 gms
- Flour - 100 gms
- Melted butter - 60 gms
- Cocoa powder / grated chocolate for topping
For the Icing :
- Eggs 5 Nos
- Sugar 1/2 cup
- Mascarpone cheese - 500 gms
- Heavy whipping cream - 1 cup (230 cc)
For the espresso syrup :
- Espresso coffee - 2 cups
- 2 tsp sugar
- 2 tsp Marsala wine (optional)
Method :
For the cake :
1. Preheat the oven at 200 C. Line the baking tray with baking paper.
2. In a large mixing bowl, beat eggs until foamy, gradually add in sugar & beat until fluffy.
3. Fold in flour, melted butter & vanilla essence, mix until just combined.
4. Pour the batter into baking tray and bake for 10 mins. Cool on rack.
For the filling :
1. Beat the cream & egg whites seperately till stiff. Keep it aside.
2. Whisk the egg yolks, sugar and marsala wine in a large glass bowl until blended. Set the bowl over a saucepan of simmering water, but do not allow the bottom of the bowl to touch the water. Whisk the egg mixture over the simmering water until it is thick
and creamy, about 4 minutes. Remove from the heat.
3. Mash the mascarpone cheese until creamy. Add the egg yolk mixture into the mascarpone cheese and beat to mix very well.
4. Finally fold the cream & egg whites gently into the mascarpone cheese mixture.
For the espresso syrup :
1. Prepare a strong espresso coffee using coffeefilter. Dissolve 2 tsp sugar & 2 tbsp marasala wine in it.
Assembling :
1. Spread the baked sponge roll & brush the espresso syrup over the cake (one side only).
2. Now spread the filling & roll the cake gently.
3. Sprinkle the cocoa powder / grated chocolate on the top & refrigerate for atleast 2 hrs before serving.
