Mint and coriander thogayal is simple, easy and very healthy. This can be served with rice / rotis. We can use only mint or coriander or mix of of mint, coriander and curry leaves for this preparation.
Ingredients :
- Mint leaves - 1 bunch, washed
- Coriander leaves - 1 bunch, washed
- Oil - 1 tsp
- Urad dal - 1 tbsp
- Channa dal / Bengal Gram - 1 tbsp
- A pinch of hing
- Ginger - 1 inch
- Garlic - 4 pods
- Red chillies - 5 to 6 nos
- Tamarind paste - 1 tsp
- Salt to taste
- Onion - 1 small sized
- Coconut, grated - 1/4 cup (optional)
Method :
1. Heat oil in the pan, add urad dal, bengal gram, red chillies, ginger, garlic, hing and chopped onion. Saute.
2. Add mint leaves, tamarind paste and coriander leaves. Saute for one min and switch off the flame. (Don't overcook the greens)
3. Allow the mixture to cool completely.
4. Coarsely grind the mixture along with the coconut and salt.
Serve.
