Ingredients :
- Carrots, roughly chopped - 500 gms
- Ginger, grated - 2 tbsp
- Garlic - 2 cloves (optional)
- Onion - 1 large sized
- Tomato - 1 large sized
- Oil / butter - 1 tsp
- Bay leaf - 1 no
- Water / Vegetable stock - 750 ml
- Salt to taste
- Nutmeg powder - 1/2 tsp
- Black pepper powder to taste
Method :
1. Pressure cook the carrots, ginger, garlic, onion, tomato and salt till done. Alternatively, cook them in the pan or microwave.
2. Allow them to cool completely and puree them to smooth consistency, adding water if necessary.
3. Heat butter in the pan, add bay leaf and pour the carrot puree and water (or vegetable stock). Simmer it for 10 mins.
4. Finally, add nutmeg powder and black pepper powder. Remove the bay leaf and garnish it with grated ginger.
Serve warm.
