Hard boiled eggs immersed in a delicious South Indian- style coconut curry sauce scented with kasoori methi leaves.
Ingredients :
For Egg :
- Boiled Eggs - 5 nos
- Oil - 1 tsp
- Chilly powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Salt to taste
For Curry :
- Oil - 1 tsp
- Cinnamon stick - 1 big stick
- Cloves - 3 nos
- Cardamom - 2 nos
- Cumin seeds - 1 tsp
- Onion, chopped- 2 nos
- Ginger garlic paste - 1 tbsp
- Tomatoes, chopped - 2 small sized
- Green chillies - 2 nos
- Fennel seeds - 1/2 tsp
- Turmeric powder - 1/2 tsp
- Coriander powder - 1 tsp
- Chilly powder - 1 tsp
- Garam masala powder - 1 tsp
- Salt to taste
- Hot water - 1 cup
- Coconut paste - 1/2 cup
- Kasoori methi leaves - 1 tsp
Method :
For Egg :
1. Boil the eggs. Remove the shells & slightly slit the eggs.
2. Heat a tsp of oil in a pan, add turmeric powder, chilly powder & salt. Saute for few mins or until you see crispy texture on the eggs. Keep aside.
For Curry :
3. Heat oil in the pan, add cinnamon stick, cloves, cardamom & cumin seeds.
4. Add chopped onions. Saute till tender.
5. Add ginger garlic paste, turmeric powder, chopped tomatoes, green chillies & cook until mushy.
6. Add fennel seeds, coriander powder, chilly powder & garam masala. Cover & cook for few mins.
7. Add hot water to adjust the consistency.
8. Add coconut paste & dry fenugreek leaves.
9. Finally, add fried eggs & cook for few mins or until done.
