Panchmael Daal (Rajasthan Special) | Five Lentils Mix


 Panchmael means a mix of five, hence the name of this dish.  It can be made with just three types of lentils - those most easily obtainable in larger supermarkets and health food stores are red, moong and chana.  A visit to an Asian grocery store will enable you to find the others but you can make the dish with just one type.


Ingredients :

  1. Moong dal - 2 tbsp
  2. Toor dal - 2 tbsp
  3. Chana dal - 2 tbsp
  4. Black urad dal - 2 tbsp
  5. Masoor dal - 2 tbsp
  6. Salt
  7. Ground turmeric powder - 1 tsp
  8. Oil
  9. A pinch of hing
  10. 1 large onion, chopped
  11. Red chilly powder - 1 tsp
  12. Garam masala - 1 tsp
  13. 1 tomato, chopped
  14. Coriander leaves, chopped
  15. Squeeze of lemon juice

16.  Ghee - 2 tsp
17.  1 Red chilli
18.  1/2 tsp cumin seeds
19.  Cloves - 2 nos
20.  2 garlic cloves, finely chopped

1.  Mix all the lentils together, then wash under running water.  Add water, hing, turmeric powder - 1/2 tsp, oil & pressure cook the lentils for 2 to 3 whistles or until done.

2.  Heat oil in the pan, add onion and cook.  Add salt, turmeric powder, chilly powder, garam masala and saute.  Then add the tomato and cook until soft.

3.  Pour the lentils over the onion mixture and bring to the boil.  If the lentils begin to thickens too much, add some water and keep stirring.

4.  In a separate pan, add ghee, red chilli, cumin seeds, cloves & garlic.  Cook.  Pour the contents over the lentils and garnish it with coriander leaves.

5.  Finally, squeeze some lemon juice.  


Serve with rice/rotis.
