Aloo bonda is a deep fried delicious snack prepared with potatoes and chickpea flour batter. It can be had as an appetizer or as a tea time snack. Best served with coconut chutney.
Ingredients :
For potato stuffing :
- Oil - 2 tsp
- Urad dal - 1 tsp
- Mustard seeds - 1 tsp
- Green chillies, chopped - 3 nos
- Grated ginger - 1/2 tsp
- Cashew nuts, chopped - 1 tsp
- 1 small sized Onion, chopped
- Curry leaves, chopped - 1 tbsp
- 7 small sized potatoes, boiled & peeled
- Salt to taste
- Turmeric powder - 1/2 tsp
- 1/2 lemon juice
- Coriander leaves
For Batter :
- Gram flour (Besan) - 1/2 cup
- Rice flour - 1/2 cup
- Salt to taste
- Water
- Chilly powder - 1 tsp
- A ping of hing
- Cooking soda - 1/2 tsp
- Oil for deep fryin

For potato masala :
1. Heat oil in the pan, add urad dal, mustard seeds, green chillies, grated ginger, cashew nuts, chopped onion & curry leaves. Sauté till tender.
2. Add and smash the potatoes. Add salt to taste, turmeric powder. Sauté.
3. Add lemon juice & chopped coriander leaves.
4. Bring the masala to the room temperature. Make small balls from potato masala and keep aside.
For batter :
4. Mix together gram flour, rice flour, chilly powder, salt, hing, cooking soda & water. The batter should be neither thin or thick.
5. Heat oil in the deep frying pan, dip the potato balls in the batter and fry them over medium heat until crispy on all sides.
Serve with chutney.
