Chocolate Banana Cake


Soft, fluffy & flavourful cake.  This needs very few ingredients & less preparation time.  Best way to make use of ripe bananas.  Make it more delicious by frosting the cake with chocolate ganache.  


Ingredients :

  1. All purpose flour - 1 3/4 cups (230 gms)
  2. Unsweetened cocoa powder - 3/4 cup (75 gms)
  3. Baking powder - 1 1/2 tsp
  4. Baking soda - 1 1/2 tsp
  5. Salt - 1/2 tsp
  6. Granulated sugar - 1 3/4 cups (340 gms)
  7. Eggs - 2 nos
  8. Ripe bananas - 1 cup
  9. Milk - 1/2 cup
  10. Oil (Vegetable or sunflower ) - 1/2 cup
  11. Water - 1 cup
  12. Instant coffee granules - 1 tbsp
  13. Vanilla extract - 1 1/2 tsp

  
Method :

1.  Grease & line up the baking pan with parchment paper.  Preheat the oven at 180 C.

2.  Sieve together flour, cocoa powder, baking powder, baking soda, salt & sugar.

3.  Mash the bananas & add 2 eggs.  Whisk together without any lumps.  


4.  Add milk, oil, water, vanilla extract, coffee granuales & water in the banana mixture.   Wet ingredients are ready.

5.  Gently fold the dry ingredients into the wet ingredients and pour the batter into prepared pan.

6.  Bake it for 35 mins or until the toothpick inserted comes out clean.
