Crème Brûlée




Crème brûlée is super easy to cook and makes you look like a dinner party rock star because you can prepare them well in advance and just do the flame thrower bit for a party trick!

Ingredients :
  1. Whipping cream - 11/3 cups
  2. Vanilla essence - 1 tsp
  3. Egg yolks - 4 large sized
  4. Sugar - 1/4 cup plus 6 tbsp

Method :

1.   Preheat the oven at 150 C.  Prepare the baking dishes over a baking pan.

2.   Whisk together egg yolks and sugar until thick and creamy.

3.   Heat the cream and slowly add the egg mixture, stirring continually.

4.   Filter the cream mixture and pour it in the prepared dishes.

5.   Place the baking dishes in the baking pan.  Pour enough hot water in the baking pan so that the water comes halfway up the sides of the baking dishes.

6.   Bake it for 40 mins or until the custards are set.  Bring it to room temperature & refrigerate it.

7.   Before serving, sprinkle some castor sugar over the custard.  Caramelise it until golden brown using the kitchen torch or preheated broiler.


Serve it.

Broccoli Soup


My favorite things about this soup: It’s very easy to make; it doesn’t call for too many ingredients; it’s creamy and rich without any added fat; it has a nice salted flavor; it’s very healthy and filling;  and, oh yeah, it’s delicious!

Ingredients :
  1. Olive oil - 1 tbsp
  2. Garlic - 2 pods, finely chopped
  3. Chicken or vegetable stock - 275 ml
  4. Broccoli florets - 200 gms
  5. Black pepper, freshly grounded
  6. Salt to taste
  7. Cream for garnishing

Method :

1.   Heat oil in the pan and fry garlic for 2 mins.  

2.   Pour the chicken or vegetable stock and then the broccoli florets.

3.   Bring it to boil and reduce the heat and simmer for 15 mins.

4.   Add salt and pepper.  Once done, blend until smooth.

5.   Drizzle with cream and serve.


Serve with bread :)
