5 Ingredients Variety Rice Spice Powders - Secret Masala powder !!!


I use this 5 ingredients spice powder to make carrot rice, capsicum rice, peas rice, vegetable rice, chickpeas rice and so on.  Refrigerate the powder for longer use.


Ingredients :
  1. Coconut, grated - 2 tsp
  2. Urad dal - 1 tsp
  3. Coriander seeds - 1 tsp
  4. Red chillies - 4 nos
  5. A pinch of hing 

Dry roast the ingredients and grind them to fine powder. Store it an air-tight container and refrigerate it for longer use.

Homemade Pancake Mix !!


My kids love pancakes.   They like to have it anytime of the day and this homemade pancake mix makes more easy to make.  This is really handy mix and fool-proof recipe for light and fluffy pancake. 


Ingredients :
  1. All purpose flour - 1 cup
  2. Sugar - 1 tbsp
  3. A pinch of salt
  4. Baking powder - 1 tsp
Mix all the ingredients together and store in an air-tight container.  



To make Pancakes :

Ingredients :
  1. Pancake mx - 1 cup
  2. Egg - 1 no
  3. Milk - 1 cup
  4. Melted butter - 1 tbsp plus for greasing
Combine a cup of pancake mix with egg, milk and melted butter. Pour 1/3 cup of batter and cook until bubbles on the surface on the pancakes have popped.  Flip and cook until the underside is light golden.

Pumpkin Soup - Very Healthy !!!


Try this nutritious and delicious pumpkin soup with your favourite bread.  


Ingredients :

  1. Butter - 1 tsp
  2. Onion, chopped - 1 small sized
  3. Tomato, chopped - 1 small sized
  4. Garlic - 2 pods
  5. Salt to taste
  6. Pumpkin, peeled and chopped - 2 cups
  7. Water - 2 cups
  8. Bay leaf - 1 no
  9. Nutmeg powder - 1/ 4 tsp
  10. Black pepper powder, to taste
  11. Cream - 1 tbsp,  optional
  12. Coriander leaves for garnishing

Method :

1.  Pressure cook the onion, tomato, garlic, pumpkin, salt and water for 2 to 3 whistles or until done.  Allow the mixture to cool completely.

2.  Once cooled, blend to smooth paste.  

3.  Heat butter in the pan,  add bay leaf.  Add pumpkin paste and adjust the salt and pepper powder to taste.   Add water, if necessary.  Cook them over medium heat for 5 mins.

4.  Garnish it with coriander leaves and cream (optional).


Serve warm.

Spicy n Crunchy Chickpeas Kurkure !!!


Chickpeas are a good source of energy and nutrition.  This can be cooked in many ways. Spicy and crunchy kurkure tastes wonderful as a snacks or an appetiser.


Ingredients :

  1. Chickpeas (Chole), soaked overnight - 2 cups
  2. Red chilly powder - 1 tsp
  3. Black Pepper powder - 1 tsp
  4. Hing - 1/2 tsp
  5. Coriander powder - 1 tsp
  6. Dried Mango powder - 1 tsp
  7. Chat Masala - 1 tsp
  8. Salt to taste
  9. Oil, for frying

Method :

1.  Pressure cook the soaked chickpeas in high flame for one whistle. (Don't over cook the chickpeas, it becomes very soft)

2.  Drain the cooked chickpeas and spread in clean cloth.  Let it dry in open air for 2 to 3 hours.  

3.  Heat oil in the frying pan, drop the chickpeas and cook them over medium heat until crispy and brown. (It takes little longer to cook)



4.  Meanwhile, mix all the spice powders together.  

5.  Mix the spice powders in fried chickpeas.  (Try to mix the spice powders, when the chickpeas is little warm)

6.  Store it an air-tight container for longer use.

KFC Fried Chicken using Potato Chips with Indian Flavours!!!


Try this simple, crispy and delicious KFC style fried chicken using potato chips.  Depending upon your spice level, adjust the red chilly powder and pepper powder proportion.  This delicious snack just taste like the original recipe.  Try it today and enjoy!!!


Ingredients :
  1. Chicken pieces - 250 gms (preferably legs and thighs)
  2. Oil for frying
For Marination :
  1. Soy Sauce - 1 tbsp
  2. Salt to taste
  3. Red chilly powder, to taste
  4. Pepper powder, to taste
  5. Coriander powder - 1 tsp
  6. Lemon juice - 1 tbsp
Marinate the chicken pieces with these ingredients for atleast one hour.

For First Coating :
  1. Cornflour
  2. Chilly powder
  3. Pepper powder
  4. Salt
  5. Bread crumbs
Mix all the ingredients together and keep aside.


For Second coating :
  1. Egg - 1 no
  2. Milk -  1/4 cup
  3. Salt to taste
Mix and beat the egg, salt and milk together.  Keep aside.

For third coating :
  1. Crushed potato chips
  2. Bread Crumbs
Mix both the ingredients together and keep aside.


Method :

1.  Dip the marinated chicken pieces in the flour mixture (first coating) and spread it in the plate.

2.  Now, dip the flour coated chicken pieces in the egg mixture (second coating) and then in the potato chips mixture (third coating).

3.  Heat oil over medium heat and deep fry them till done & crispy on all sides. 


Serve immediately.
