Restaurant Style Chicken Curry


Making restaurant style chicken curry at home doesn't have to be intimidating. This recipe comes together in under an hour and is an excellent way to add some versatility to your weeknight dinner arsenal. And it's primarily comprised of ingredients you probably already have on hand—chicken, onions, garlic, spices and  tomato puree.


Ingredients :

For Marination :

  1. Chicken - 3/4 kg
  2. Salt to taste
  3. Black pepper powder - 1/2 tsp
  4. Turmeric power - 1/2 tsp
  5. Chilly powder - 1 tsp
  6. Juice from 1/2 lemon
Mix all the ingredients together & marinate the chicken for at least 1/2 hr, preferably overnight.


Spice Paste :

  1. Grated coconut - 1/2 cup
  2. Onion - 1 large sized
  3. Ginger pcs - 1 tsp
  4. Garlic - 3 pods
  5. Red chilly - 2 nos
  6. Cinnamon stick
  7. Cloves- 3 nos
  8. Bayleaf
Grind them together to smooth paste.

Others:
  1. Oil - 2 tbsp
  2. Garam masala - 1 tsp
  3. Coriander powder - 1 tsp
  4. Chilly powder - to taste
  5. Tomato puree - 1/2 cup
  6. Water -  1 cup
  7. Juice of 1/2 lemon
  8. Coriander leaves, for garnishing

Method :



1.  Heat oil in the pan, add marinated chicken & stir fry for 5 mins.

2.  Add spice paste to the chicken & cook.

3.  Add garam masala, coriander powder, chilly powder, tomato puree & water.  Cover & cook the chicken over medium heat for 10 to 15 mins or until done.

4.  Finally, add juice of 1/2 lemon & garnish it with coriander leaves.


Enjoy.

Air Fried Crispy Fried Chickpeas | Channa Dal - Just a tsp of oil is enough !!!!


Air roasted chickpeas - golden & crisp on the exterior & buttery on the interior - simple healthy snack.


Ingredients :
  1. White chana dal / Chickpeas - 2 cups
  2. Oil - 1 tsp
  3. Salt to taste
  4. Black salt - 1/4 tsp
  5. Chilly powder - 1 tsp
  6. Dry mango powder - 1/2 tsp

Method :


1.  Clean & soak the chick peas over night.

2.  Drain the water & spread the chick peas over the kitchen towel for 15 mins.

3.  Preheat the air fryer @200 C for 5 mins.

4.  Grease the pan with oil & spread the chick peas in the air fryer.

5.  Fry @ 200 C for 10 to 15 mins or until crispy.

6.  Mix salt, black salt, chilly powder & dry mango powder to the fried channa.

7.  Store it in air tight container.


Enjoy with tea.

Egg Curry !!


Hard boiled eggs immersed in a delicious South Indian- style coconut curry sauce scented with kasoori methi leaves.



Ingredients :

For Egg :

  1. Boiled Eggs - 5 nos
  2. Oil - 1 tsp
  3. Chilly powder - 1 tsp
  4. Turmeric powder - 1/2 tsp
  5. Salt to taste
For Curry :
  1. Oil - 1 tsp
  2. Cinnamon stick - 1 big stick
  3. Cloves - 3 nos
  4. Cardamom - 2 nos
  5. Cumin seeds - 1 tsp
  6. Onion, chopped- 2 nos
  7. Ginger garlic paste - 1 tbsp
  8. Tomatoes, chopped - 2 small sized
  9. Green chillies - 2 nos
  10. Fennel seeds - 1/2 tsp
  11. Turmeric powder - 1/2 tsp
  12. Coriander powder - 1 tsp
  13. Chilly powder - 1 tsp
  14. Garam masala powder - 1 tsp
  15. Salt to taste
  16. Hot water - 1 cup
  17. Coconut paste - 1/2 cup
  18. Kasoori methi leaves - 1 tsp

Method :
For Egg :

1.  Boil the eggs.  Remove the shells & slightly slit the eggs.

2. Heat a tsp of oil in a pan, add turmeric powder, chilly powder & salt.  Saute for few mins or until you see crispy texture on the eggs.  Keep aside.

For Curry :

3.  Heat oil in the pan, add cinnamon stick, cloves, cardamom & cumin seeds.

4.  Add chopped onions.  Saute till tender.

5.  Add ginger garlic paste, turmeric powder, chopped tomatoes, green chillies & cook until mushy.

6.  Add fennel seeds, coriander powder, chilly powder & garam masala.  Cover & cook for few mins.

7.  Add hot water to adjust the consistency.  

8.  Add coconut paste & dry fenugreek leaves. 

9.  Finally, add fried eggs & cook for few mins or until done.

CHICKEN NUGGETS


Chicken Nuggets is an easy snack recipe which is enjoyed and relished by kids and adults alike. Best served with green chutney, this chicken recipe is apt for pot luck and kitty parties. If you happen to be a chicken lover, then this easy Chicken Nugget recipe is perfect for you.


INGREDIENTS :

  1. Minced chicken - 300 gms
  2. Bread slices - 2 nos
  3. Ginger garlic paste - 1 tsp
  4. Chilly powder - 1 tsp
  5. Salt to taste
  6. Soy sauce - 1 tbsp
  7. Oil for frying
  8. Egg - 1 no
  9. Milk - 1/4 cup
  10. Bread crumbs - 1 cup
METHOD :


1.  Trim the corner of the bread.  Slice the bread & grind them to fine powder.

2.  Mix together minced chicken, grounded bread, ginger garlic paste, chilly powder, salt & soy sauce.  Keep aside.

3.  Heat oil in the pan.

4.  Take a small dollop of minced chicken mix & dip them in the egg mixture first.  Then dip them in the bread crumbs.  Shape the patties & set aside.

5.  Deep fry the patties in the oil till golden brown on all side. 

6.  Instead of frying, fry the patties in the air fryer @ 200 C for 15 mins. 


Serve warm.

Pineapple Salsa as a Dip or Salad


This easy pineapple salsa is SO good that I could just sit and eat it out of the bowl. It’s really simple and extremely versatile. You can use this to top chicken, fish, burritos, quesadillas, salads… the sky is the limit. It should stay good in the refrigerator for 3-4 days but chances are it won’t last that long!


Ingredients :

  1. Pineapples, chopped - 1 cup
  2. Onion, chopped - 2 tbsp
  3. Tomato, chopped - 1 tbsp
  4. Green chillies, chopped
  5. Mint leaves / Coriander leaves, chopped
  6. Shredded ginger - 1/2 tsp
  7. Salt to taste
  8. Black salt - 1/2 tsp
  9. Cumin powder  - 1/2 tsp
  10. Peanuts - 1 tbsp

Mix all the ingredients together.  


Serve chill or immediately.
