Khajur Roll | Dates & nuts roll

 


Dates n nuts rolls is very healthy & easy sweet which takes just few mins to prepare.  Best part of this sweet is zero sugar & diabetic friendly.  Addition of nuts along with dates gives crunchy texture & nutmeg and cardamom powder gives additional flavour to this sweet.  It's no fail recipe which is perfect for any special occasions.


Ingredients :
  1. Seedless dates - 250 gms
  2. Nuts (Almonds, cashew nuts, pista) - 1/2 cup
  3. Cardamom powder - 1/2 tsp
  4. Nutmeg powder - a pinch
  5. Ghee - 1 tbsp
  6. Poppy seeds - 2 tbsp

1.   Chop the nuts finely.  Grind the dates to coarse paste.

2.   Mix together the dates paste, chopped nuts, cardamom powder, nutmeg powder and cook them in ghee over medium heat till everything combines really well.  Allow them to cool slightly.

3.   Roast the poppy seeds and spread them in the aluminium foil and roll the dates mixture like a log.  Refrigerate them for an hour.  Remove the foil and cut them in rounds.  


Store it in room temperature and serve.

Aloo Bonda | Potato Bonda | உருளைக்கிழங்கு போண்டா



Aloo 
bonda is a deep fried delicious snack prepared with potatoes and chickpea flour batter. It can be had as an appetizer or as a tea time snack.  Best served with coconut chutney.

Ingredients :

For potato stuffing :

  1. Oil - 2 tsp
  2. Urad dal - 1 tsp
  3. Mustard seeds - 1 tsp
  4. Green chillies, chopped - 3 nos
  5. Grated ginger - 1/2 tsp
  6. Cashew nuts, chopped - 1 tsp
  7. 1 small sized Onion, chopped 
  8. Curry leaves, chopped - 1 tbsp
  9. 7 small sized potatoes, boiled & peeled
  10. Salt to taste
  11. Turmeric powder - 1/2 tsp
  12. 1/2 lemon juice
  13. Coriander leaves
For Batter :
  1. Gram flour (Besan) - 1/2 cup
  2. Rice flour - 1/2 cup
  3. Salt to taste
  4. Water
  5. Chilly powder - 1 tsp
  6. A ping of hing
  7. Cooking soda - 1/2 tsp
  8. Oil for deep fryin

For potato masala :

1. Heat oil in the pan, add urad dal, mustard seeds, green chillies, grated ginger, cashew nuts, chopped onion & curry leaves.  Sauté till tender.

2.  Add and smash the potatoes.  Add salt to taste, turmeric powder.  Sauté.

3.  Add lemon juice & chopped coriander leaves.  

4.  Bring the masala to the room temperature.  Make small balls from potato masala and keep aside.

For batter :

4.  Mix together gram flour, rice flour, chilly powder, salt, hing, cooking soda & water.  The batter should be neither thin or thick.  

5.  Heat oil in the deep frying pan, dip the potato balls in the batter and fry them over medium heat until crispy on all sides.  



Serve with chutney.

SABUDANA KHEER | JAVVARISI PAYASAM | SAGO KHEER


Simple but heart-warming, this creamy kheer made with sabudana or javvarisi (sago pearls) is easy to make and absolutely delicious.

Ingredients :

  1. Sabudana - 1/4 cup
  2. Oil / ghee - 2 tsp
  3. Milk (Full fat )- 3 cups
  4. Sugar - 1/4 cup
  5. A pinch of saffron
  6. Nuts (Cashewnuts, almonds, dry grapes)
  7. Cardamom powder - 1/2 tsp

Method :



1.  Clean and soak the sabudana for 30 mins.  Drain the water and keep aside.

2.  In a pan, add oil or ghee.  Add drained sabudana & milk.  

3.  Bring it to boil & cook the kheer over medium heat for 15 - 20 mins.

4.  Add sugar, saffron, fried nuts & cardamom powder.  Cook till you get the desired consistency.  Kheer becomes thick once cooled down.  Refrigerate.
