Spiced Paneer Fried Rice - Indo Chinese !!



Ingredients :

For Paneer :

  1. Paneer - 1/4 kg
  2. Chilly powder - 1 tsp
  3. Coriander powder - 1 tsp
  4. Pepper powder - 1/2 tsp
  5. Cumin powder - 1 tsp
  6. Salt to taste
  7. Oil - 2 tsp
For Rice :
  1. Basmati Rice, cooked and cooled - 2 cups
  2. Oil - 1 tbsp
  3. Ginger, chopped - 1/2 tsp
  4. Garlic, chopped - 1 tsp
  5. Onion, sliced - 1 no
  6. Capsicum, chopped - 1 no
  7. Carrot, thinly sliced - 1 no
  8. Cabbage, sliced
  9. Spring onions
  10. Salt to taste
  11. Soy sauce - 1 tsp
  12. Pepper powder - 1 tsp
  13. Red chilly flakes, to taste

Method :

For Paneer :

1.  Mix all the ingredients together and marinate the paneer mixture for 15 mins.

2.  Heat oil in the pan, toast the marinated paneer till crispy.  Keep aside.


For Rice :

3.  Heat oil in the pan, add chopped ginger, garlic and onion.  Saute.

4.  Add carrot, cabbage, capsicum, spring onion and salt to taste.  Cook till crispy.

5.  Add soy sauce, pepper power, red chilly flakes and rice.  Simmer the heat and gently mix together.

6.  Finally, add paneer to the rice and garnish it with spring onions.


Serve warm.

Egg Noodles !!


No need to go out and have this delicious egg noodles when you can make and relish it at home.  All we need is noodles with finely sliced vegetables, eggs and sauce.  I used pizza sauce, to make it kids friendly instead we can use red chilly sauce for spicy flavour.


Ingredients :

  1. Hakka Noodles - 1 packet
  2. Salt to taste
  3. Vegetables (Carrot, beans, capsicum), sliced - 1/2 cup
  4. Oil - 1 tbsp 
  5. Garlic, finely chopped - 2 tsp
  6. Soy sauce - 1 tsp
  7. Onion - 1 no, sliced
  8. Spring onions 
  9. Egg - 2 nos
  10. Pepper powder to taste
  11. Tomato sauce - 1/2 tbsp
  12. Pizza sauce / Pasta sauce - 1/2 tbsp (or Use chilly sauce)
  13. Vinegar / Lime juice - 1/2 tsp

Method :

1.  Boil water, add a tsp of oil and the noodles.  Cook as per the instructions given in the packet.  Drain and keep aside.

2.  Heat oil in the skillet, add garlic, onion and sliced vegetables.  Add salt and saute.

3.  Add soy sauce, tomato sauce, pizza sauce (or pasta sauce / chilly sauce) and mix well.


4.  Meanwhile, in a separate pan cook the eggs along with the salt and pepper powder.  Scramble them.

5.  Stir in the noodles and scrambled eggs to the vegetable mixture.  Toss well.

6.  Finally, squeeze some lime juice and chopped spring onions.


Serve warm.

Bamboo Rice Kheer | Moongil Arisi Payasam


Bamboo rice though looks like wheat but richer in protein and has rich source of Vitamin B.  They are very beneficial for removing joint pains and controlling blood sugar.  This delicious kheer can be made using jaggery / sugar / coconut milk.  To make this kheer, pressure cook the rice and then with milk, sugar, nuts, cardamom powder till desired consistency. This payasam is really thick and delicious which can be served warm or chilled.


Ingredients :

  1. Bamboo rice - 1/4 cup
  2. Milk - 4 cups
  3. Nuts (Cashew nuts, almonds, pistachio)
  4. Saffron, few strands
  5. Sugar to taste
  6. Cardamom powder
  7. Ghee - 1 tbsp

Method :

1.  Wash rice and soak it over night or atleast 4 hours.  Pulse the bamboo rice in the mixer for few seconds (To grind them coarsely).

2.  Pressure cook the bamboo rice with one cup of milk.

3.  Heat ghee in the pan, roast the nuts and keep aside.



4.  Boil 3 cups of milk along with the cooked rice.  Add sugar and saffron strands.

5.  Cook till desired consistency and finally, add cardamom powder.

6.  Garnish it with roasted nuts.


Serve warm or cold.

Bread Uttapam !!


Uttapam is a South Indian delicacy.  This is one of the easiest and quick version of uttapam using bread.  We can use white or brown bread for this preparation.  To make it more healthy and kids friendly, try to add grated carrot and capsicum.  Serve it with chutneys.


Ingredients :

For Batter :

  1. White bread slices - 6 nos 
  2. Semolina / Rava - 1/2 cup
  3. Rice flour - 2 tbsp
  4. Yoghurt - 1/2 cup
  5. Water, as required
  6. Salt to taste
  7. Oil
For toppings :
  1. Onion, finely chopped - 1 no
  2. Tomato, finely chopped - 1 no
  3. Coriander leaves, finely chopped - 3 tbsp
  4. Green chillies, optional
  5. Salt to taste

Method :
 
1.  Cut the sides of the bread and crumble them in the mixer.

2.  Add semolina, rice flour, yoghurt, water and salt to the crumbled bread.  Allow the batter to rest for 15 mins.  (Add enough water for the desired consistency)

3.  For the toppings, mix and combine together onion, tomato, coriander leaves, green chillies and salt.  Keep aside.



4.  Heat the dosa pan and spread the dosa batter slightly thick.  Spread the toppings on the top evenly.  

5.  Drizzle some oil around the edges.  Cook on either sides.


Serve with chutneys.
