Tomato Pickle


Transform Simple meal into a Tasty Meal – That’s the power of a pickle.Tomato pickle tastes amazing when served with any breakfast items like upma,idli and dosa..

Tomato pickle is also very healthy & has major dietary source of the antioxidant lycopene and helps in reducing the risk of heart diseases and cancer. Tomato pickle also a great source of vitamin C, potassium, folate and vitamin K. So, there you go.. A tasty and yet healthy pickle. 

Ingredients :

  1. Tomatoes - 1 kg, washed and chopped finely
  2. Gingely Oil / Olive oil - 1/2 cup 
  3. Chilly powder -  3 tbsp
  4. Salt to taste
  5. Mustard seeds - 1 tsp
  6. Fenugreek seeds - 1/2 tsp
  7. Vinegar - 1 tbsp


Method :
In Tamil


1.  Clean, chop & grind the tomatoes coarsely.

2.  In a non-stick pan, cook the tomato puree until dry. (Cook for 20 mins approximately)

3.  In a separate pan, add oil.  Once warm, add salt & chilly powder.  Mix well.

4.  Pour the oil to the tomato mixture & continue cooking for another 5 to 10 mins.

5.  In a separate pan, dry roast mustard seeds & fenugreek seeds.  Grind them to powder.

6.  Add the grounded spice powder to the tomato pickle.  

7.  Allow the pickle to cool completely.

8.  Add vinegar to the pickle.  

9.  Store the pickle in clean & air tight container.

10.  Refrigerate the pickle for longer use.

RAGI VERMICELLI PUTTU



Ragi Semiya Puttu is a quick and healthy recipe which can be prepared using instant Ragi semiya. It can be a good breakfast or evening tiffin .



Ingredients :
  1. Ragi vermicelli - 2 cups
  2. Water - 2 cups
  3. Salt - 1/2 tsp
  4. Grated coconut - 1/2 cup
  5. Cardamom powder - 1/2 tsp
  6. Sugar to taste

Method :




1.  Mix 2 cups of ragi vermicelli along with 2 cups of water & salt.  

2.  Soak the ragi vermicelli for 3 mins & squeeze the water thoroughly.


3.  Spread the vermicelli in the pan & steam cook for 10 mins.


4.  Before serving, add grated coconut, cardamom powder & sugar to taste.

ALOO KEEMA MATAR


Aloo keema matar is a delicious side dish that we can easily prepare at home with few ingredients & less time.  A delicious blend of minced meat, potatoes & peas sautéed in a thick mixture of stimulating flavours like cloves, cinnamon, cardamom & bay leaves cooked along with coriander powder, cumin powder & garam masala for a delicious curry.


INGREDIENTS :
  1. Mutton Keema - 1/2 kg
  2. Green peas - 1 cup
  3. Oil - 1 tbsp
  4. Cinnamon stick 
  5. Cloves - 3 nos
  6. Cardamom 
  7. Bay leaves
  8. Onion, chopped - 1 cup
  9. Ginger garlic paste - 1 tsp
  10. Salt to taste
  11. Potatoes, cubed - 3 medium sized
  12. Turmeric powder - 1/2 tsp
  13. Chilly powder - 1 tsp
  14. Coriander powder - 1 tsp
  15. Cumin powder - 1 tsp
  16. Garam masala - 1 tsp
  17. Water - 1 cup
  18. Coriander leaves for garnishing
  19. Lemon juice 

METHOD :
In Tamil


1.  Heat oil in the pressure cook, add cinnamon stick, cloves, bayleaf & cardamom.

2.  Add chopped onions & salt.  Saute.

3.  Add ginger garlic paste, turmeric powder & cubed potatoes.  Mix well.

4.  Add chilly powder, coriander powder, cumin powder & garam masala. Mix.

5.  Add water & pressure cook for 3 whistles. 

6.  Transfer the cooked keema matar to the non-stick pan & keep stirring.

7.  When the mixture is dry, add chopped coriander leaves & lemon juice.


Serve with rotis or rice.

Sakkarai Pongal without dal | Sweet Pongal



Pongal is the harvest festival of Tamil Nadu. The enthusiasm and the zeal of Tamilians comes alive during the four day festival. Pongal literally means "boiling over". This festival is the biggest event of the year for the Tamilians.

The four day festival consists of Bhogi-Pongal, Surya-Pongal, Mattu-Pongal and Kanyapongal.

Pongal is a unifying festival in my family. On this day, we prepare atleast two varieties of pongal & exchange it to all my friends & neighbours near by. Pongal is all about spreading small amount of love and joy in the neigbouring homes and enjoy the festival with family and friends.


Ingredients :
  1. Rice - 1 cup
  2. Powdered Jaggery - 1 cup (as per ur taste)
  3. Milk - 2 cups
  4. Water - 2 cups 
  5. Cashewnuts
  6. Cardomom powder - 1/2 tsp
  7. Edible camphor - a pinch (optional)
  8. Ghee - 1/2 cup 
  9. Raisins (kishmish) - 1 tbsp

Directions :
In Tamil



1.  Pressure cook the rice with 2 cups of milk & a cup of water for 3 to 4 whistles.

2.  Melt jaggery in a cup of water over a medium flame.  Cook them till you see the bubbles.

3.  Smash the cooked rice & add them to the jaggery water.  Mix well without any lumps. Cook the pongal will it separates from the sides of pan.

4.  Fry the cashew nuts and raisins in the ghee & add it to the sweet pongal.

5.  Finally add the cardamom powder & edible camphor (optional).  Mix well.

SURA PUTTU / SHARK FISH CURRY / SCRAMBLED FISH CURRY


Surra puttu is an usual recipe made with fish at home.  This easy-to-make fish recipe is made with mild spices, lots of garlic, green chillies, onion and tastes best with rice or roti.  Try it.



Ingredients :

  1. Shark - 500 gms
  2. Oil - 2 tbsp
  3. Cinnamon stick
  4. Cloves - 3 nos
  5. Onion, chopped - 4 medium sized
  6. Garlic, chopped - 15 pods
  7. Green chillies - 8 nos, chopped
  8. Salt to taste
  9. Turmeric powder
  10. Garam masala powder - 1 tsp
  11. Coriander leaves for garnishing

Method :
Recipe in English


1.  Cook the shark in the water or steam cook for 10 mins.

2.  Remove the shark skin & clean them in the water again.

3.  Squeeze the water from the shark between the palms.  There should be no water in the shark pieces.  Keep aside.

4.  Heat oil in the pan, add cinnamon sticks & cloves.

5.  Add chopped onion.  Sauté.

6.  Add chopped garlic & green chillies.  Sauté.

7.  When onion is tender, add salt & turmeric power.

8.  Scramble the fish & add it to the onion.  Mix & cook well until the curry looks dry.

9.  Finally, add garam masala & chopped coriander leaves.


Serve warm with rice or rotis.

Mor Kuzhambu using Grand sweets & snacks mix - Very quick & super yummy !!!


Mor Kuzhambu is one of the favourite dish of SouthIndian Cuisine.  A yoghurt based stew that can be served with rice and other breakfast items like vadai, dosa, Uppuma & Adai.

Grand sweets & snacks mor kuzhambu mix is really handy & it takes just few mins to make.  This curry taste delicious even without any vegetables.  



Ingredients :
  1. Yoghurt - 1 cup (or Buttermilk)
  2. Mor kuzhambu paste - 1 tbsp
  3. Coriander leaves for garnishing

Method :


In Tamil


1.  Add more kuzhambu paste to the yoghurt & whisk well.

2.  Cook the kuzhambu over a medium flame for 3 mins or until you see the bubbles around the edges.

3.  Don't overcook the kuzhambu.

4.  Garnish it with coriander leaves.

Ready to enjoy with rice.

Note:

We can add any vegetables for additional flavour.

CLASSIC TIRAMISU - NO EGGS & ALCOHOL FREE !!

Tiramisu is one of the most widely recognized Italian desserts. In Italian the word for this sweet dessert actually means "pick me up", likely referring to the caffein-laden espresso used to make this delectable treat. 

Tiramisu consist of two layers of lady fingers soaked in espresso with the optional addition of liquor and sugar, filled and iced with whipped cream and mascarpone cheese and garnished with the chocolate shavings, which is refrigerated before being served. 

I recommend you actually use real espresso in this recipe, as the authentic flavor of the dish only shines through when real Italian ingredients are used. Also, you may find it difficult to find savoiardi (ladyfingers) that adequately soak up the coffee. I suggest looking for an Italian brand cookie (alternatively sponge cakes can be used) . Then get ready to make a "WOW"-ing dessert!

Ingredients :

  1. Mascarpone cheese - 250 gms
  2. Heavy whipping cream - 250 ml
  3. Icing sugar - 2 tbsp (to taste)
  4. Vanilla extract - 1 tsp (or vanilla sugar - 1 packet)
  5. Ladies finger biscuits / Savoiardi  
  6. Espresso Coffee - 1 cup
  7. Sugar - 1 tsp
  8. Unsweetened cocoa powder - 1 tsp
Method :

In tamil :



1.  Whip mascarpone cheese till light & creamy.

2.  Add whipping cream, vanilla sugar & icing sugar and keep whisking till creamy.

3.  In a separate bowl, mix a cup of coffee & sugar.  Keep aside.

4.  Dip the biscuit in the coffee & layer them evenly in the serving bowl.

In English :


5.  Spread half the quantity of cream mixture over the biscuit, as a second layer.

6.  As a third layer, dip the biscuits again in the coffee and arrange.

7.  Finally, spread the remaining cream mixture evenly.

8.  Sprinkle the unsweetened cocoa powder over the cream using the tea filter.

9.  Refrigerate for at least 2 hours before serving.
