Chicken chukka fry



Ingredients :
  1. Chicken pieces - 1/2 kg
  2. Oil - 2 tbsp\
  3. Onion - 2 nos
  4. Tomato - 1/2 piece 
  5. Curry leaves - 1 tbsp
  6. Ginger piece - 1 inch
  7. Garlic  - 5 pods
  8. Turmeric powder - 1/2 tsp
  9. Chilly powder - 1 tsp
  10. Salt to taste

Method :

1.   Grind together the onion, tomato, curry leaves, ginger & garlic to smooth paste.

2.   Clean & cut the chicken pieces.  Marinate the chicken pieces with the grounded masala for atleast one hour.  Add turmeric powder, chilly powder & salt to taste.

3.   In a heavy bottomed pan, add a tbsp of oil & fry the marinated chicken till dry.



Serve with rice.

Moist Blueberry muffins



Ingredients :

  1. All purpose flour - 2 cups
  2. Baking powder - 11/4 tsp
  3. Baking soda - 1/2 tsp
  4. Salt - 1/4 tsp
  5. Granulated sugar - 3/4 cup
  6. Egg - 1 large sized
  7. Plain yoghurt - 1 cup
  8. Vegetable oil - 1/3 cup
  9. Vanilla extract - 1 tsp
  10. Fresh or frozen blueberries - 1 cup

Method :

1.   Preheat the oven to 375 F.  Line up the muffin trays with paper liners.

2.   Sieve the flour, baking powder, baking soda & salt together. Whisk in the sugar & gently stir in the blueberries.

3.   In a large bowl, whisk in the yoghurt, lightly beaten egg, oil & vanilla extract.

4.   Gently fold the wet ingredients into the dry ingredients until well combined.  This will be a thick batter.

5.   Fill the muffin cups with the batter and bake it for 20 mins or until done.

Make 12 muffins.
