Pumpkin Soup - Very Healthy !!!


Try this nutritious and delicious pumpkin soup with your favourite bread.  


Ingredients :

  1. Butter - 1 tsp
  2. Onion, chopped - 1 small sized
  3. Tomato, chopped - 1 small sized
  4. Garlic - 2 pods
  5. Salt to taste
  6. Pumpkin, peeled and chopped - 2 cups
  7. Water - 2 cups
  8. Bay leaf - 1 no
  9. Nutmeg powder - 1/ 4 tsp
  10. Black pepper powder, to taste
  11. Cream - 1 tbsp,  optional
  12. Coriander leaves for garnishing

Method :

1.  Pressure cook the onion, tomato, garlic, pumpkin, salt and water for 2 to 3 whistles or until done.  Allow the mixture to cool completely.

2.  Once cooled, blend to smooth paste.  

3.  Heat butter in the pan,  add bay leaf.  Add pumpkin paste and adjust the salt and pepper powder to taste.   Add water, if necessary.  Cook them over medium heat for 5 mins.

4.  Garnish it with coriander leaves and cream (optional).


Serve warm.
