Nimki



Nimki is a crispy snack which has a flavour of kalonji (onion seeds) and cumin seeds. It tastes savory like namakpaare. Nimki is one of the favorite evening deep fried snack which can be enjoyed with a hot cup of tea.


Ingredients :

For the dough :
  1. All purpose flour (Maida)- 1 cup
  2. Cumin seeds - 1/4 tsp
  3. Kalonji (onion seeds) - 1/4 tsp
  4. Salt to taste
  5. Ghee - 1 tbsp
  6. Red chilly flakes - 1/2 tsp
  7. Water, for kneading - 1/4 cup
  8. Oil for deep frying
  9. Cloves (optional)
For the paste :
  1. All purpose flour - 1 tbsp
  2. Oil - 1 tbsp
Others :
  1. Lavang or Black pepper corns (optional)
  2. Oil for deep frying
Method :


1.  Mix together flour, cumin seeds, kalonji, salt to taste, ghee and red chilly flakes.  The flour should resemble like bread crumbs.

2.  Slowly add water and prepare the dough.  The dough should be little hard (not a soft dough).  Cover & rest the dough for 10 mins.

3.  Meanwhile, in a small bowl - mix together flour (1 tbsp) and oil to a smooth paste.  Set aside.

4.  Now roll the dough in a slightly thin chapathi.

5.  Spread the flour & oil paste evenly throughout the chapathi. 

6.  Roll the dough tightly from one side and roll it till the end.  This helps in getting multiple layers in nimbi which makes it flakier.

7.  Take a knife and cut the dough carefully from one end at a gap of 1 inch or less.

8.  Roll the cut pieces into a circular shapes like puri and fold it in half and again fold it to form a triangular shape.

9.  While rolling prick the triangular shaped dough all the sides with the help of a fork, it avoids puffing up in the pan while deep frying.  Seal the edge using a cloves or black pepper corns.

10.  Heat oil in the frying pan over the medium heat, deep fry the nimki until crispy and golden brown in colour.


Enjoy with tea.
