Tutti Fruiti Cake


Ingredients :

For the topping:

  1. Tutti fruiti 
  2. Butter - 25 gms
For the batter:
  1. Butter - 125 gms
  2. Sugar - 125 gms
  3. Vanilla essence - 1 tsp
  4. A pinch of salt
  5. Eggs - 3 nos
  6. All purpose flour - 2 cups
  7. Baking powder - 2 tsp
  8. Milk - 1 -2 tbsp



Method :

1.   Grease the baking pan & line up with the parchment paper.  Preheat the oven about 180 C.

2.   To make the topping, melt the butter in a small pan.  

3.   For the sponge, whisk the butter in a mixing bowl using the whisk attachment until soft.  Add the sugar, vanilla essence & salt little by little, whisking all the time until you obtain a smooth mixture.

4.   Whisk in the eggs, one after the other, for about 1/2 min each on the highest setting.  Mix together the flour and baking powder and whisk briefly in two instalments on the medium setting, alternating with the milk.  

5.   Transfer the mixture into the baking pan & smooth to make it even.  Sprinkle the tutti fruity & pour the melted butter over them.  Bake for about 45 mins.
